Dutch Dairy Show nt Edam.
From Brock to Edam, the home of tho
famous rouud Dutch chec.ie, is about 40
minutes on the train. A great dairy
show and goueral exhibition were going
■ ’ll whilo I was in Holland, and I was
curious to visit this famed town and to
^ee how they conducted a fair. Tbo
low n itself is very much like all the
small Dutch towns. The entire place is
cut up with canals, and to get to iho ex­
hibition oue must cross a groat many
drawbridges. Tho streets are narrow,
hut all pavocl with hriok or stone. Some
of tho h;>ns"s lean toward the street and
-omn away from it. The usual number
of side shows, candy shops awd reshtu-
ranis lined tho way. Flags were flying
in al! direction?, whilo arches of roses
and plant.- spanned tho streets. Tho
j»lace for holding tho fair, strange to
;.y, was in Iho grounds of ono of iho
large churches and in somo of the ent-
1 mMings or sli< ds which apparently be-
I inged to the church. The sheep and
caftlo were standing on streets adjoin­
ing tho church, entrance being obtained
through tho fence which .surrounded
them.
Tho first placo visited of interest to
hiirymon v-’::s an exhibit of dairy uten­
sils. These goods were got up in excel­
lent stylo, and many of them were
unique. For instance, a gang press for
edams was constructed somewhat as
follows: A trough (similar to a Cana­
dian gang press) is elevated at ono end
about five feet. At the other end is a
w heel to which aro attached three small
ropes, the center one of which extends
«»ver tho elevated end and has a weight
attached. On each side of the wheel is
a rope which is connected with a frame
that applies continual pressure to tho
cheese, according to tho weight which is
attached to 1 he center cord. Aset of
pasteurizing apparatus looked very nice,
hut would be rather expensive f ji ordi­
nary dairy werk. The cooler was a large
corrugated circular tin with, water on
the inside; tho milk trickles over the
outside. Dr. Gerber’s centrifugal milk
cater aud also tho Lister-Babcock were
on exhibition.
From here to ibe hallwhero the edam
and gonda chooses wcro shown was a
short distance, but iho great crowd
made it rather difficult to get through.
Home of the cheeses were finished in
very fino style, having been coated with
! linseed oil, which made the smooth
rinds on theso round cheeses glisten like
, glass.

( foil. Most of tho cheeses for export are
I colored on the outside and wrapped in
j foil. When cut in two, they are some-
