operated t>> its full rapacity. The rattle

Garibaldi in a different aspect from the
usual sleepy little sea side hamlet.
In the morning the upper bay is
dotted with sails The fish boats are
starling (o lake the previous night's
catch to the camiety. They take their
turns in delivering fish at the cannery
wharf, ami a man stands inside counting
the fish and throwing them back out of
the way with a gaff. Here is where the

men are dexterously cutting off’ the
l eads of the salmon, their fins and en­
trails are removed deftly and neatly, ami

truly sai<l that no food pioduct is pre­
pared, manufactured, or put up with
any more scrupulous regard lor cleanli­
ness and purity than canned salmon,

a gang knife, which cuts them into sufi-
cient lengths for the cars, and then the
cans are carefully filled by hand, this
process being considered b. tier than the
machine process,’as the filling machine

into a pulpy mass, and injures its appear­
ance and cale in the market. There is
labor saving machinery at every step,
however, in I he cannery, and some very
expensive and ingenious contrivances
are used. Forty-e ight cases are salted
at once by a handy device, the filled cans
are then rapidly passed through a wash­
ing machine, ami then fed into the cap­
ping machine which places on the caps
and criiup\them with r.nerringaccuracy.

“Physiology and Hvgeine.” After dis­
