Snowflake Waffle Cookies When is a waffle not a waf fle? When it's a cookie, of course! These unusual Snow flake Waffle Cookies, adapted from a century-old southern recipe called Plunkets, come lo you just in time for the Christmas season. Prepare them quickly like cake batter and drop by spoonfuls onto a waffle iron lo bake. Your children will be intrigued with these tiny "waffles" light ly flavored with lemon rind and juice and sprinkled with confec tioners' sugar. And you'll find a handy snack to give your youngsters and their friends when they come in after a busy day of play. Best of all. you know the cookies help supplement t li c i r regular meals with some of the nutrients they need everyday to maintain their sparkling good health and high spirits. As in all your home baking, prepare Snowflake Waffle Cookies with enriched flour. Enriched flour contributes three essential B vnamins and the mineral iron to your baking and to all the commercially prepared flour products you buy. Before all the Snowflake Waf fle Cookies disappear, save some and store in a tightly closed cookie jar or container. These cookies are ideal whenever a not - too - sweet snack or des sert is in order. Try them with ice cream. SNOWFLAKE WAFFLE COOKIES 1 cup sifted enriched flour 1 teaspoon baking powder n4 teaspoon baking soda '2 cup butter or margar ine 1 i cup sugar 3 eggs 2 tablespoons grated lemon rind 1 tablespoon lemon juice Confectioners' sugar Sift together flour, baking powder and soda. Cream togeth er butter or margarine and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in lemon rind and juice. Add flour mixture gradually to creamed mixture beating well after each addition. Drop batter by round ed measuring teasponfuls on waffle baker. Bake only four cookies at a time). Bake on low heat for l'j to 2 minutes. Carefully remove from waffle baker and cool. Sprinkle with confectioners' sugar. Makes S dozen cookies. If you don't sift and in the absence of other directions, spoon flour directly from con tainer into dry measuring cup. level off, then remove two level tablespoonfuls, a-c-c-o-r-d-i-n-g to USDA recommendations. Note: Self-rising flour is not recommended for this recipe. Number of ingredients: 8. Number of utensils: 13. Total preparation time: 1 hour.
