Oregon Thursday, July II, 1963 Luxury Breakfasts In New Orleans at Brennan's French Restaurant on Royal Street, long, luxurious Sunday breakfasts are a gourmets la vorite pastime. Ella Brennan Martin, the talented proprietor, serves a special fresh fruit com pote first. Next comes Eggs Hussarde with Hollandaise and Marchand de Vin Sauces. This prized recipe is its own best description. EGGS HL'SSARDE (1 erring) 2 large thin slices ham, grilled 2 Holland rusks Vi cup Marchand de Vin Sauce (recipe attached) 2 slices tomato, grilled 2 eggs, soft poached i cup Hollandaise Sauce (rec ipe attached) Lay a large slice of ham across each rusk and cover with Mar chand de Vin Sauce. Cover next with tomato and then egg. Top with Hollandaise Sauce. Garnish with Paprika. HOLLANDAISE SAl t'E (1 cup) 4 yolks of eggs j pound butter, melted 2 tablespoons lemon juice ' teaspoon salt In top half of double boiler beat egg yolks and stir in lemon juice. Cook very slowly in double hoiler over low heat, never al lowing water in bottom pan to come to a boil. Add butter a lit tle at a time. Stir constantly with a wooden spoon. Add salt and, pepper. Continue cooking slowly until thickened. MARCHAND de VIN SAUCE (2 runs) i cup butler 1-3 cup finely chopped mush rooms i cup minced bam 1-3 cup finely chopped shallots i cup finely chopped onion 2 tablespoons garlic, minced 2 tablespoons flour i teaspoon salt teaspoon pepper Dash of cayenne li cup beef stock M cup wine (red) In a 9-inch skillet melt butter and lightly saute the mushrooms, ham, shallots, onion and garlic. When the onion is golden brown, add the flour, salt, pepper and cayenne. Brown well, about 7 to 10 minutes, Blend in the stock and the wine and simmer over low heat for 35 to 45 minutes.
