If desired, insert slivers of garlic in slits at various spots around the roast. Sprinkle entire roast with salt and pepper. Run spit through exact center of lamb roast and arrange on rot is scrie over glowing coals. Allow 25 to 30 minutes per pound or use a meat thermometer, when a meat thermometer is used, cook to an internal temperature of 175-180 degrees. Prepare glaze by melting cur rant jelly and stirring in mustard. If roast is large you may want to increase amount of glaze. Brush over the meat during Litter part of cooking time. Prepare marinade of French Dressing or lemon juice and but ter and pour over lamb In shallow pan. Let stand 1 hour or more. Sprinkle generously with seasoned salt and 'k teaspoon lamb herbs. Place marinated lamb fat side up over hot coals and broil 45 min utes to 1 hour 15 minutes, basting with marinade and turning to brown both sides. Broil to desired doncness. Just before meat is done, place pineapple slices on squares of heavy duty foil and heat for last 5 minutes. Brown sugar and cinnamon may be sprinkled over hot pineapple rings before serving. Remove lamb from grill and cut across grain into thick slices and serve hot with pineapple. Commercially packed; or trv dry mint flakes, rosemary and dry grated orange peel. THICK LAMB RIB CHOPS Rib chops should be cut 1 to U4 inches thick for best flavor and juiciness. French the bone ends of chops and wrap in foil to prevent charring. Rub grill with piece of lamb fat. Arrange chops on grill and cook over glow ing coals eight to ten minutes on each side. To determine when chops have cooked to the desired degree, make a small slit next to the bone. Chops are at their best when meat is slightly pink. Season just before serving. For different flavor, chops may be marinated before cooking or served with lemon butter. Lemon butter (for eight !4 cup butter, 4 teaspoon salt, dash or two of tabasco sauce, 2 table spoons chopped parsley, 2 table spoons lemon juice. Let butter soften in bowl. Work with fork until creamy. Add salt, tabasco sauce, parsley. Slowly acid lemon juice and blend.
