Oregon i If PARFAITS AND COOKIES Thursday, April 25. i PACE 1 B r 3" LET'S CELEBRATE Flaky cookies, ice cream and fruit, there are lots of combina tions to make a deilcious dessert for warm weather. Maybe a bit early for this extra good dessert but summer will come someday. , Deep Dish Cherry Pie FILLING 1 cup sugar teaspoon salt , 2 teaspoons cornstarch 3 cups pitied red cherries 1 cup sifted flour 'z teaspoon salt 1-3 cup butter 3 tablespoons cold water 1 quart vanilla ice cream Mix sugar, salt and cornstarch, and combine with cherries. Pour into well buttered shallow casserole. Sift flour, measure, and resift with salt. Cut in butter until coarse crumbs, size of rice are formed. Add water by teaspoons The name parfait lends gla mour to the combination of ice cream and a topping which is com monly called a sundae. A tall, graceful parfait with layers of cith er fruits or sauces and ice cream is an e-appealing finale to any meal. Why not ireat your family to this pleasure? No, special glass es' aren't a necessity. L'se any handy tall glass and create your own dessert parfait. Peaches and blueberries, raspberries, strawber ries cherries, crushed pineapple and mint jelly, or plain peaches combine well with vanilla ice cream. Pcrhr-ps you have another favorite flavor of ice cream you would like to use ... or a variety of flavors' in one is delicious. Parfaits can be made ahead of1 time and stored in the freezer. Just bclore dinner, place them in the refrigerator to give them a chance to solten slightly. Isn't there a tall glass in your cupboard that would take on new elegance when used to serve a parfait tonight? FRESH FRUIT SAK E Fresh peaches, blueberries, rasp berries, strawberries, and cher ries make good parfaits. Wash the berries and drain. Peel peaches and pit. then slice. Pit chcr -i s. Crush fruit only slightly. For each cup. stir in about U to 1-3 cup sugar. Combine crushed pineap ple and mint jelly: blend well. Place on ungrcased cookie sheet. Brush tops with beat en egg. Mix sugar, cinnamon nnd nuts: sprinkle mixture over cook ies. Bake in moderate oven, 350 degrees, until lightly browned, about 15 minutes. Makes 6 dozen cookies.
