THYME LUNCHEON LOAF (Makes load Vt cups warm water (105 de grees to 115 degrees F , 1 package or cake yeast, ac tive dry or compressed 2 tablespoons margarine, soft ened 2 tablespoons sugar l'i teaspoons salt ' 1 teaspoon leaf thyme I 23 cups unsifted flour ; .Melted margarine t Measure warm water into large warm bowl. Sprinkle or crumble in yeast: stir until dissolved. Stir in margarine, sugar, salt, thyme and half the flour. Beat two min utes at medium speed on electric mixer, or 150 vigorous strokes h fland; scrape sides and bottom of bowl frequently. With spoon beat in remaining Hour until smooth Scrape batter down from sides nf bowl, Cover; let rise in warm . place, free from draft, until dou- I -bled in bulk, about one hour. Stir down batter by beating 25 :-strokes. Turn into greased Vi ;!quart casserole, or a greased 9 x ;,5 x 3-inch bread pan. Bake in moderate oven (375 degrees F. 145 to 50 minutes or until done, iirush top of loaf with melted margarine. Delicate Flavor A hint of lemon and a sprink ling of caraway seeds add deli cate flavor to this casserole bread. If you love lemon-y fla vor, substitute lemon juice for water in making the confection ers' sugar frosting. . LEMON CARAWAY ' CASSEROLE BREAD (Makes 1 loall 1 cup milk 'i cup sugar " 1 teaspoon salt ' 'j cup (1 stick i margarine ' 'j cup warm water (15 de ' grees to 115 degrees F. " 2 packages or cakes yeast, active dry or compressed 2't cups unsifted flour 2 teaspoons caraway seeds I teaspoon lemon extract Confectioners' sugar frosting Scald milk. Stir in sugar, salt and margarine; cool to luke warm. Measure warm water into large warm bowl. Sprinkle or crumble in yeast; stir until dis solved. Stir in lukewarm milk mixture. Add Hour, caraway seeds ;and lemon extract; beat well IBatter will be stiff. Cover; let ;rise in warm place, free from 'draft, until doubled in bulk, about one hour. , Stir batter down. Turn into well greased l'j quart casserole, or a greased 9 x 5 x 3-mch bread pan Pake in moderate oven (350 dc grees F.) 40-50 minutes or until done. Remove from casserole. Frost while hot with confection ers' sugar frosting to glaze loaf. Upside Down :: Pork Muffins 1 pound ground pork ; lt cups condensed consomme 10'i oz. can! 1 cup thinly sliced carrots (3 to 4 carrots' 1 teaspoon salt 'a teaspoon caraway seed - 2 teaspoon dry mustard U teaspoon pepper . cup water 2 tablespoons enriched flour . 1 cup cooked peas (8-ounce can i Muffins Brown pork in hcavv skillet brain and reserve drippings for muffins. Stir in consomme, car- Tots, salt, caraway seed, dry mus tard and popper. Simmer gently until carrots are almost tender, about 10 minutes. Blend water and flour to make a smooth paste. Add to pork mixture, stirring con stantly until mixture thickens Stir in peas and keep hot while preparing muffm batter, rill twelve ungreased 6-ounce baking dishes about 1-3 full of hot pork mixture. Drop muflin batter onto hot pork mixture filling about 2-3 full. Bake in hot oven ' 425 degrees' 20 to 25 minutes or un til muffins are golden brown. Turn out upside down onto serving plates, two pur serving. MUFFINS 3 cups silled enriched flour ' cup sugar 4 teaspoons baking powder 1 teaspoon salt 2 eggs, beaten 1 cup milk ' cup reserved pink drip pings Sift together flour, sugar, bak ing powder and salt. Blend eggs, milk and pork drippings. Add liquid to flour mixture, slirrinc only until flour is moistened. Drop by heaping tablespoonfuls onto hot pork mixture. . Makes 8 servings. .' If self-rising flour is used, omit baking powder and salt.
