TED HYDE Here are some favorite recipes! lor ground hcef taken from local Cow Belle Files: VIOLA CHEYVE'S IIAMIU KC.KR STEW (4 to i servings) 1 lb. lean ground beef 1 egg Salt and pepper Combine and form into small meat balls, about ' j size of a wal nut. Let set while preparing the fol lowing: i 1 No. 2 can tomatoes 1 small can tomato sauce i cup ketchup Pinch of oregano Salt and pepper Combine and bring to a boil. Add meat balls to sauce slowly enough so that sauce never stops boiling. Cook about 10 minutes. a cups diced potatoes 3 cup diced carrots 1 stalk diced celery Cook together about 20 minutes. Add to sauce and meat balls just before serving. (Other leftover vegetables may be added at this time also if you wish.) GERDA HYDE'S MEAT LOAF 2 lbs. ground beef 1 cup dry crumbs (may be bread, cracker, cereal I 1 can condensed soup (such as vegetable, celery, toma to, mushroom) 2 tablespoon minced or dried onions Salt and pepper 1 1 cup brown sugar 1 egg (optional i Mix all ingredients together. Bake at 330 degrees in large loaf or individual small loaves, or when in a hurry, in muffin tins. Large loaf will take between 1- l'j hours, smaller ones less time. Scallped or baked potatoes make a good accompaniment to share the oven. ELIZABETH CAMPBELL'S TAMALE PIE 1 lb. lean ground beef 2 onions, chopped Salt and pepper 1 No. 2'j can tomato juice Your youngsters will anticipate lunchtime eagerly when you tuck a surprise into their lunch boxes. Here's one idea: prepare white or chocolate cupcake batter. Spoon batter into paper muffin cups, filling cups 'i full. Into each white cupcake drop a milk choco late candy kiss. Into the choco late batter drop a miniature marshmallow. Then sxion on re maining batter and bake as di reeled. Frost tops of cupcakes, if you wish. (or whole tomato' I No. 303 can whole kernel corn 1 tablespoon chili powder 1 green pepper, chopped 1 can ripe olives, pitted 1 cup yellow corn meal Broun beef and onions: add tomato juice, corn, green pepper and chili powder and bring too boil. Add corn meal gradually to boiling mixture, stirring well to avoid lumping. Add olives and pour all into casserole or baking dish and bake one hour at 350 degrees. LIZ HYDE'S BEEF AND RICE (6 servings) l'j lbs. lean ground beef Salt and pepper 2 medium-size onions 3 carrots 1 green pepper 2 stalks celery 2 bouillon cubes, dissolved in 2 cups hot water I cup uncooked rice Brow n meat in any utensil w hich may be tightly covered later (dutch oven, electric skillet, even a large saucepan). Season. Put onions, carrots, pepper and celery through grinder. Add them and remaining ingredients to meat Cover and cook over low heat for about 45 minutes.
