Many years ago in a sod house on a Nebraska prairie my moth er cooked a combination that our family still enjoys, macaroni and scrambled eggs. Sho cooked the long sticks of macaroni (there were no cut sizes or fancy shell shapes in those days) in plenty of salted water until tender, drained well in a colander and while still hot poured it into a black iron skillet in which a couple of tablespoons of butter had been melted, cracked half a dozen eggs, fresh from the hay mow, over the macaroni, dropped in a bit of minced parsley from her garden or a spoonful of finely cut chives waited until the cg.ss had trick led down through the macaroni and browned a bit. then stirred gently. She used a pancake turn er to turn over the combination, something like an omelet, let it brown again and served pipin; hot. It was delicious. . With eggs so plentiful in the Klamath Basin and the price on all sizes "way down," why not try some of the delicious dishes too which use eggs. GRKEN NOODI.KS EN COQUILI.K 3 cups green noodles teaspoon tabasco, divided '4 cup butter or margarine ' cup flour 1 teaspoon salt 2' i cups milk 1 cup diced sharp cheddar cheese '4 cup grated Parmesan cheese 1 can (4 ounces I pimiento, diced 3 hard cooked eggs, sliced Cook noodles according to pack age directions adding one fourth teaspoon of the tabasco to the. cooking water. Drain and rinse. Melt butter. Stir in flour, salt and remaining one half teaspoon ta basco. Add milk and stir over medium heat until mixture is smooth and slightly thickened Add cheddar and Parmesan cheese and stir until melted. Add diced pimiento and cooked noo dles and mix. Pour into 6 cup casserole. Bake at 350 degrees about 30 minutes. Top with egg slices last 5 minutes of cooking lime. Makes ft to S servings. Th Air Fores 1 cup iB' j ounce can' whole kernel corn, drained 1 cup grated S iss cheese. divided 4 eggs 2 cups heavy cream 34 teaspoon tabasco ' teaspoon sugar 1 tcaspon salt Spread butter over unbaked pie shell. Combine green on ions, corn and one half cun of the Swiss cheese. Pour into pie shell. Beat eggs, heavy cream, tabasco, sugar and salt. Pour over corn mixture in pie shell Sprinkle with remaining one hall cup Swiss cheese. Bake at 425 degrees 15 minutes. Reduce heat lo low temperature, 300 degrees, and continue baking 40 minutes onger. Serve at once. Makes 12 appetizer or 6 main dish servings. CHEDDAR E(i(;s 1 package 18 ounces) sliced cheddar cheese 'j teaspoon salt i tea-spoon tabasco 1 cup heavy cream eggs '4 teaspoon paprika Butter individual baking dishes, or long shallow baking dish. Line bottom with slices of cheese, re serving some of cheese. Combine, salt, tabasco and heavy cream. Pour half of this mixture into bottom of baking dishes. Break one at a time, into a cup. Slide into baking dishes Pour remaining cream over eggs. Cut remaining cheese into very tine pieces and sprinkle over cream. Bake eggs at 425 degrees about 15 minutes or until as done as desired. Sprinkle with paprika. Makes 5 servings. Spinach, Sour Cream Omelet I dozen eggs 3 tablespoons water 'z teaspoon salt 'j teaspoon tabasco 4 lo 6 tablespoons butter or margarine Break eggs into large mixing bowl. Combine water, salt and tabasco. Add to eggs. Beat only until well blended. Do not beat until frothy. Melt butter in skil let using 1 tablespoon per ome let. The pan Is hot enough when drop of water splatters in nan Add enough egg mixture for one omelet allowing one fourth of the mixture for main dish serving and one sixth of the mixture for appetizer serving. Action is important as is posi tion of hands. Left hand is placed on pan handle with palm down moving pan in back and forth motion. Right hand holds fork and moves in circular motion. This motion is continued for about seven times. Reverse position of left hand, placing on handle with palm upward. Tip nan and roll omelet out onto hot dish. Place pinach and sour cream sauce over the omelet. Makes B appetizer omelets or 4 main duih omelets. Naturally, you'll wear at least a touch of green, so why not car ry the celebration further . . . into the meals you plan for the day? You can hardly find a more appropriate main dish to serve on St. Pat's Day than corned beef and cabbage. The combina tion is a real tradition with the I cup sour cream Trim spinach, wash and drain well. Place in saucepan. Sprinkle with one teaspoon of salt and cover tightly. Cook over moder ate heat, stirring once or twice, 10 minutes or until tender. Drain and chop coarsely. Return to saucepan. Stir in butler, tabasco nutmeg, remaining one teaspoon salt and sour ercam. Reheat gent ly without boiling. Use as sauce over omelets. CURRIED EGG DIP 4 teaspoon tabasco i teaspoon curry powder teaspoon dry mustard 'i teaspoon salt -t cup mayonnaise 1 tablespoon minced onion cup finely diced celery 4 hard cooked eggs, finely chopped Blend tabasco, curry powder, dry mustard, salt and mayon naise.
