These greens are at '. -(heir nest w hen they are extreme " -ty young and tender. 4 pounds boneless pork shoulder, cut up for stew 1 cup flour 2 tablespoons salt 1 tablespoon paprika 1 teaspoon pepper 1-3 cup poly-unsaturated oil 4 large onions, quartered 6 stalks celery, trimmed and sliced diagonally 10 carrots, pared and cut di agonally into chunks 4 large potatoes, pared and quartered ',4 teaspoon rosemary 'A teaspoon basil (optional) !t teaspoon seasoned pepper (optional) 2 quarts water 3 (8-ounce) cans tomato sauce 2 to 3 tablespoons flour Combine flour, salt, paprika and pepper in paper bag. Add meat cubes, a portion at a lime, to bag; shake to coat pieces. Brown meat in hot oil in large pot or dutch oven. Remove any excess fat. Add vegetables, rose mary, basil, seasoned pepper, wa ter, and tomato sauce. Simmer, uncovered, IS to ! hours. Re move 1 cup stew liquid; blend in 2 tablespoons flour. Return to stew mixture, stirring to blend thoroughly. When stew has thick ened, tasle and add seasonings Variation: Add a package of frozen cut green beans to por tion of stew that's to bo served immediately. Allow 20 minutes for beans to cook. To cook frozen portion, allow to thaw; heat in moderate oven (350 degrees! for 30 minutes. Frozen green beans may also be added to frozen portion for the last 20 minutes. I Cheese Mold 2 tablespoons unflavored gel atin 2 cups milk 'i cup catsup 2 cups (1 pint) creamed cot tage cheese 1 teaspoon salt ',3 teaspoon paprika 1 tablespoon vinegar 1 cup diced celery li cup green pepper strips 'i cup thin radish slices i cup shredded carrots Vi cup minced onion Soften gelatin In Vi cup cold milk; dissolve over hot water. Heat remaining milk to luke warm; add gelatin. Stir in cat sup, cottage cheese, salt, paprika and vinegar. Cool until slightly thickened; fold in vegetables. Pour into buttered two - quart mold.
