Sinnhuber. food and dairy technologists, wilt continue basic studies of fat oxi dation started several years ago at 0SC with a new grant of $37,009 from the U.S. department of health, education and welfare. Fat autoxidation. the combination of oxygen with fat, affects both the consumer and the food proc essor. When foods are exposed to air, oxygen attacks the fats and through a series of reactions ran cid flavors develop which destroy natural flavors. Certain of the es sential nutrients are also lost in the process. As a result, the food becomes unappetizing and less nu tritious. 0SC scientists emphasize that these food spoilage problems are not serious in most foods now on the market because food proces sors have taken the necessary steps to protect foods through proper processing, packaging, and han dling. Autoxidation is serious, however, they say in the development of new and improved foods. In many cases, new and less expensive foods such as dried whole milk- could, be placed on the market if the fat autoxidation could be controlled. Dried whole milk can be processed successfully but on storage, oxygen rapidly attacks the milk fat and an unnatural flavor develops. There's also a possibility that some of the chemical compounds that develop in highly rancid foods may have harmful effects when eaten, the food technologists point out. ObC studies on salmon -and mink showed harmful effects on the animals when highly rancid fats were included in their diets. First area of OSC research will be a study of unsaturated fatty acids, common In most main food fats and most susceptible to oxy gen attack. Later they will study complete fats such as vegetable. milk and fish fats. Further stud ies will then be conducted to learn harmful effects of fats when included in animal diets.
