PECAN-DATE MOl'SSE 2-3 cup fresh California dates to cup pecans 1 envelope plain gelatin . cup cold water 3 eggs, separated h cup maple-flavored syrup j teaspoon salt V teaspoon maple flavoring li cup whipping cream Pit and cut dates in small pieces;, chop pecans. Soften gel atin in cold water. Beat egg yolks; blend in syrup, salt and -maple flavoring. Beat until thick and lemon colored; add softened gel atin, place over low heat until mixture comes to a boil; stir fre quently. Remove from heat and cool. Beat esg whites and cream separately until stiff; fold each into maple mixture; fold in dates and nuls. Turn into a 1-quart mold or individual molds. Chill until firm. ' ' Applesauce Cake I There are countless types of ap plesauce cakes but we think that this "Berkshire Applesauce Cake" beats them all. It has a wonder ful texture and the addition of nat-turally-sweet raisins gives the prep aration more eating pleasure than ever. BERKSHIRE APPLESAUCE CAKE 4 cup shortening 1 cup sugar 1 egg 1 cup thick strained unsweet ened applesauce 2 cups sifted cake flour 1 teaspoon salt 1 teaspoon sqda 1 teaspoon baking powder 1 teaspoon cinnamon 'i teaspoon allspice H teaspoon nutmeg V teaspoon cloves 1 cup light or dark raisins 4 cup chopped nuts Cream shortening and sugar to gether thoroughly. Add egg and beat well. Blend in applesauce. Sift together dry ingredients. Blend into creamed mixture gradually Stir in raisins and nuts. Turn into greased 8-inch square pan.
