Nalley's Is introducing a canned pizza sauce to save the trouble of preparing and cooking the to mato sauce which is a necessary base for your favorite pizza topping. In making thin, raised-dough pizza, remember to brush the dough with olive oil before adding the tomato sauce and topping. NALLEY'S PIZZA.SAUCE Pizza fans who have eaten piz za in Europe (and of course, wc emote our favorite export, Alvin Gordon who, with his wife, Dar ley, operates the Casa de los Tcs ores at Alamos, Sonora, Mexico), tell about two kinds of pizza. One faction favors a pizza dough made similar to a biscuit base and the oilier is yeast - raised dough, rolled almost paper thin For convenience, the former can be made with biscuit mix and the latter with hot roll mix. We greatly prefer the latter type, lo we'll talk about that. Whether you make the dough with hot roll mix or whether you cut off a chunk of dough from your next batch of light bread, you'll have better pizza if you chill I lie dough for an hour or longer in the re frigerator. Commercial pizza mak ers make the dough the day be fore so they always use day old dough. It rolls thinner. Being a member of the group which always gets a third pic crust from a two-crust recipe, the tendency at our house is to have very thin pizza. Allow the dough to rise once, ?unch it down and let It get cold, hen roll out to fit the pan you are using. And do use a pizza pan or a cooky sheet which does not have high sides. If you have to use a deep pan, use the out sicje ot the bottom of It. Oil the pan with olive oil,-- then put the dough in the pan and brush it with oil. That is impor tant. Then spread with Nallcy's Pizza Sauce. Top with cheese and anything else you like on pizza. Mozzarclla cheese the traditional type, but slice It as thin as you can. Add thin slices of salami, chopped' bacon, anchovies, mush rooms, chopped olives wnatever youjike. Then, if you wish, sprin kle with grated Parmesan cheese and bake in 450 degree oven tor 20 to 30 minutes. The pizza should brown on the bottom, but watch" it the last few minutes so it doesn't burn either top or bot tom. Cut into pie shaped wedges and eat while it is hot preferable with California red wine. If you like onions in your piz zaand - we do saute a half or whole chopped onion in olive oil, then add a can of Nalley's Pizza Sauce. Combine milk, egg, butler or mar gannc with mix. Stir brown sugar and cinnamon together. Spoon 1-3 of tbc dough into a well-creased I)x.')x3-inch loaf pan. Sprinkle with 1-3 of sugar mix. Repeat. Then add lust 1-3 of the dough and sprinkle top with remaining 1-3 of the sugar mix. Bake in moder ate oven (350 degrees) for SS to 60 minutes. Add the following topping: 2 eggs, separated 1 tablespoon water Vi cup sugar Vt cup flour Vi teaspoon baking powder 1 teaspoon grated lemon peel Beat egg yolks until thick; add waier. Combine sugar, flour, bak ing powder and peel. Add grad ually to yolks, then fold Into stiff. ly beaten egg whites. Spread on top of filling. Bnko in moderate oven (330 degrees) for 25 to 30 minutes. RAISIN SAUCE To serve with baked ham and similar meat make a sauce by mixing "j cup Drown sugar, l tea spoon dry mustard and 1 table spoon flour. Add 2 tablespoons vinegar, 2 tablespoons lemon Juice, teaspoon grated lemon peel, 1'4 cups water and Vi can Del Monte Seedless Raisins. Cook over low heat until thick, stirring con stantly. ROCKY ROAD FROSTING Make up your favorite recipe for chocolate frosting. Add 1 cup Del Monte Seedless Raisins, H cup marshmallows cut into small bits and V cup chopped nuts. Pickle Week National Pickle Week falls Hur. ing the last week in May and over the Memorial Day holiday which marks the expected start of the eating-out and picnic season of the year. Did you get by last year with a tray that was too small to carry all the things you wanted to move out of doors? Serving dishes for out of doors are important. If you like paper plates and bowls, they are now available in the coated variety for either hot or cold foods and bev erages and they save a lot of dish washing. If you don't, at least use matching dishes, preferably of light weight material. , , Nested wooden bowls and wooden trays "go with" outside eating. Why not set aside one cupboard shelf for the dishes and silver you are going to use with your out door barbecue this summer? Pickles come in such a variety of sizes, shapes and flavors that vou can suit any taste. Some like dill pic kles and others prefer the sweet pickles. Cucumber slices are per fect with hamburgers, whether you put them in the burgers or trim the lops of them. This is an ex cellent dish to serve when din ner needs to he a hurry-up af fair. Hard cook the eggs and cut olives in the morning. Use pacKagca Discuits or biscuit mix for quick "cakes," and all that's left to make is the sauce. Serve - a frozen vegetable, which will conk while the sauce is being made, and wedges of lettuce with a bottled dressing. Quick and good! OLIVE SHORTCAKES au CRATIN 1 cup ripe olives Wi tablespoons butter or mar garine y 1'.4 tablespoons sifted flour ' '4 teaspoon salt 1 cup milk 1 cup grated American cheese 2 tablespoons chopped plm i lento : 2 hard-cooked eggs Baking powder biscuits Cut olives In large pieces. Melt butter and blend In flour and salt. Add milk and cook and stir until thickened. Stir in cheese and cook and stir over very low heat until It melts.- Blend In olives. Dl- miento and diced eggs. Heat thois oughly. Serve immediately, short cake fashion, on hot biscuits. Makes I to 4 servings.
