The sirloin tip an rolled rump roasts are boneless cuts that are also' excellent for braising. The slow, moist cooking develops the tenderness of the meat. It also gives the natural juices time to mingle with the special seasonings you add. Since a pot roast is an econom ical cut it is a good one on which to try out some of the foreicn 'ccipes that'eatch your eye. The sauces and gravies you choose to accompany a pot roast are as Var' led as the herbs and seasonings you have in the cupboard. Pota toes or vegetables are often added at the end of the cooking period so hat they too benelit from the pecial seasonings. Pour sauce over the browned roast in the dutch oven Add mushrooms and parsley. Cov er and heat slowly for 2 to I'M hours or until meat is fork tender. When roast is done remove and place on a warm platter. To the meat and sauce drippings in the pan, add 14 cub water. Mix in well. Make a paste of 2 tablespoons of cornstarch and 2 tablespoons of water. Heat the sauce in the pan to boiling. Slow ly blend in cornstarch mixture. Heat again to boiling. Spoon hot gravy over each serving of pot roast. ' MUSHROOM POT ROAST Yield: I to I servings' 4 to S pound blade bone pot roast 2 tablespoons fat Liquid trom one 2 ounce can button mushrooms (',' cup) Vi cup water 2 tablespoons soy sauce 1 teaspoon ground ginger cup finely chopped green pepper 1 cup finely chopped onion 2 ounce can whole button mushrooms 1 cup chepped celery Melt fat in a dutch oven. Place the pot roast in the pan and brown on all sides. Combine liquid from the mushrooms, water, soy sauce. and ground ginger. Pour over the browned pot roast in the dutch oven. Add green pepper, onion. mushrooms, and celery. Cover and heat slowly for 2 to 2V4 hours or until the meat ' is fork tender. When the roalt is done remove from the. pan and place on a warm platter. CANTONESE GRAVY Yield: about t cups Meat and sauce drippings in the dutch oven 2 tablespoons cornstarch 2 tablespoons water Mi cup pineapple juice 4 cup water I cup pineapple tidbits Make a paste of the cornstarch and 2 tablespoons of water. Add pineapple juice and water to the meat juices in the pan. Blend well. Heat juices to boiling. Slow ly stir in the cornstarch mixture. Again heat the gravy to boiling. Add pineapple tidbits.
