FRANK CASSEROLE Yield: S servings 1 pound franks 4 cup butter cup chopped onion 34 cup chopped green pepper 1 clove garlic, chopped 2 teaspoons salt 1 tablespoons sugar 1 pound, 12 ounce can toma toes l'i cups uncooked rice 1 bay leaf teaspoon clove 'i teaspoon ground pepper 'i cup water Chili sauce Melt butter in skillet. Add onion, pepper, and garlic. Heal about 5 minutes until vegetables are soft. Mix in salt, sugar, to matoes, rice, bay leaf, clove and ground pepper. Cover. Heat slow ly about 30 to 3b minutes. Add a small amount of water during the heating time if the rice sticks to the bottom of the skillet. Score franks with several diagonal slash cs. Arrange on top of the rice and tomato mixture. Brush with chili sauce. Cover. Heat for about 5 minutes or until franks are hot. Serve immediately. BARBECUED FRANKS Yield: 5 servings 1 pound franks '? cup chopped onion 34 cup catsup 3 tablespoons cider vinegar 1 tablespoon brown sugar 2 drops tabasco sauce 5 medium-siied potatoes, baked Butter Combine onion, catsup, vinegar brown sugar, and tabasco sauce in a small pan. Heat for 5 to 10 minutes to blend flavors. Score franks diagonally three or four times. Place franks in a shallow baking dish scored side up. Spoon barbecue sauce over each frank. Place under the broiler about 5 minutes or until franks are heated through. Remove from oven and place two franks on each split, buttered baked potato.
