FIG ROUNDS This is a versatile recipe which makes a rich holiday cooky-cake. Serve in bars, squares or rounds for dessert, lopped with whipped cream, a cherry and bits of gin ger, if you like. Youngsters enjoy helping cut the rounds and eat ing the "trimmings." Turn "Ginger Fig Rounds" into a delicious cooky by cutting the cake into bars; serve them plain or rolled in powdered sugar. These cookies are splendid "keepers," staying moist and mellow-flavored to the last. Change the shape again and make another dessert by cutting squares of the fig cake. Serve them topped with soft vanilla ice cream or a creamy hard sauce. No matter how you serve "Ginger Fig Rounds," this is sure to be come one of your favorite recipes. GINGER FIG ROUNDS 1 cup pecans or other nuts 1 cup soft dried figs - 2 tablespoons thinly sliced . preserved or candied gin- T" ger W cup flaked coconut 2 eggs '.i cup brown sugar (packed) 1 teaspoon vanilla 2 tablespoons sott butter or margarine li cup silted all-purpose flour li teaspoon baking powder V teaspoon salt Sweetened whipped cream Chop nuts; clip off stems and cut figs in thin slices. Combine nuts, figs, ginger and coconut. Beat eggs until thick and foamy. Add sugar, vanilla and soft but ter, beating until creamy and well blended. Sift flour, baking powder , and salt into egg mixture; mix to smooth batter. Stir in lig mix-i ture. Turn into well greased and! floured 9-inch square pan. Bake in a moderately slow oven (325 de grees) for 30 to 35 minutes. Re move from pan and cool on wire rack. Cut into rounds with large biscuit cutter. Serve topped with sweetened whipped cream; gar nish with pieces of figs and a maraschino cherry, il desired. Cake may also be cut into bars about l'a x 3 inches and served as a cooky; roll in powdered su gar, if desired. Cake may also bo cut into squares and topped with soft vanilla ice cream or cfcamy hard sauce and served as des sort. Makes six to nine rounds, or lVj dozen bars.
