CUCUMBER PICKLES Throughout the year and cspe-l daily during National Pickle Week, pickles are chosen or the dining table, the outdoor barbecue nnd the picnic basket. Pickle production figures import antly in the sales of many of the leading food processers in the na tion. For example, Nallev's. Inc.. which is this year observing the 40th anniversary of its founding in Nalley Valley, uses care in pro cessing pickles from the very seed that is planted to the label on the bottle of the finished product. Nalley s pickles are pedigreed grown from pedigreed seed pro vided by the company to the some 500 growers annually under con tract to grow cucumbers for pickle- making at Nalley s modern food plants. Nalley's growers produce up to 20 million pounds of cucumbers during a season. These are cucum bers especially destined for the pickle jar, not for salads or cat ing raw. Nalley s employs a staff of field men who work with the growers on soil testing, determination of row distances, types of insecticides to be used, and, of course, the variety of pedigreed seed most adaptable to specific soil conditions and other factors. Field work continues throughout the harvest. With cucumbers, it is the small, unripe cucumber that is desired High selectivity is practiced to procure sizes desired for the vari ous pickle products and the maxi mum size ever used must pass through a ring two inches in diameter. Regular picking is a must with cucumbers. It Is so easy to miss the green fruit hidden by leaves of exactly the same color that it pays to pick often. Regular picking is necessary. not only to provide cucumbers of acceptable size, but careless and infrequent picking reduces yields. as one large cucumber will ex haust a plant more than many small ones. Hand picking is still the most prevalent method. Nalley s handles the cucumber harvest in a rush. Receiving sta tions, with the latest type of me chanical graders, are set up in all growing areas. The cucumbers are trucked to the plant right after grading for processing within 24 hours after pickling. fresh-pack pickles are pro cessed immediately. This is a mod ern category of pickle-making which consists of pickling fresh, green cucumbers by pasteurizing. Nalley s has pioneered in the Pa cific Northwest in this type of pickle production and has in troduced several outstanding styles, including cucumber chips, banquet dills, cucumber rensn pikle "stix," garlic dills and many others. But the centuries-old method ot making pickles by fermentation in wooden vats is still very import ant, utilizing a quantity of the cu cumber harvest. Nalley's has a battery of more than 350 wooden tanks, each holding 3,000 gallons. The cucumbers are salted down in these vats and progressively used for pickle processing, until the next harvest. Sanitation of both product and equipment is carried on in Nal ley s pickle plants to a degree which would amaze the pickle- makers of yesterday. But there s romance, too, at pickling time. The air watts spic ily through the factory kitchens, lust as it used to do in grand mother's country kitchen. The tang of vinegar, some BOO.OOO gallons on it, is blended with spices mus lard seed, celery seed, whole cloves, tumeric, cinnamon stick, peppercorns, nnd many others. II is interesting that dill, tna herb which contributes such aro matic taste to those low calorie, high vitamin dills, is added in the pharmaceutical form of a dill emulsion. Laboratory control is a constant ractor during the entire cycle ot production and also continues af ter processing. All finished pickle products are sampled, incubated lo check keeping quality and their measurable qualities compared to Ihe rigid standard for product uniformity. People are eating more pickles II of the time. The National Pickle Packers Association reports that today Americans eat 114 per cent more pickles than 20 years ago.
