THURSDAY, OCTOBER 3, 1957 HERALD AND NEWS, KLAMATH FALLS, OREGON PAGE THIRTEEN PEGGY CARSON of Merrill, Klamath Basin Potato queen, recently presented a potato chip lei to Governor Robert D. Holmes in appreciation of his proclamation setting Oc tober as Annual Potato Chip Month. Also present at the ceremony was Ben Davidson, administrator of the Oregon Potato Commission, Salem. The proclamation points up the importance of the fast-growing potato chip industry as a major outlet for the Oregon potato crop. CANDY dresses up many desserts, but the National Con fectioners' Association has come up with a new one: Candy Coated Almond Pie. The pie itself features crushed candy coated almonds (you can choose your colors to get the desired shade, or add a little pink or green food coloring) and the filling is made and poured into a baked pie shell. - CANDY COATED ALMOND PIE Pastel candy-coated almonds are "fashion news" for dressing up a pie, as shown! More than that, here's a recipe that calls for candy-coated almonds in the pie: 1 baked 9-inch pie shell 2 cups milk 3 tahlespoons cornstarch 1-3 cup sugar 11 teaspoon salt cup crushed candy-coated al monds I eggs, slightly beaten y teaspoon almond extract 1 cup coarsely broken candy coated almonds 1 cup whipped cream 12 whole candy-coated almonds RAISIN RELISH You'll find a down uses for this delicious orange-flavored Raisin Relish. Serve it for dinner with cold ham or pork, spread it on hot, buttered breakfast toast, or mix it with cream cheese for an unusual sandwich spread. RAISIN RELISH 1 cup light or dark raisins 1 tablespoon grated orange rind VI cup orange juice 1 tablespoon honey Rinse and drain raisins. Chop coarsely. Add remaining ingredi ents and blend thoroughly. Let stand several hours to blend flav ors. Serve with hot or cold meats. Bake at 3u degrees for 10 to 12 minutes. VARIATIONS Add one of the following to the original recipe: 1. 1 cup cornflakes, uncrushed. 2. 'i cup each chopped uncooked prunes and apricots. 3. 1 cup coarsley crumbled gra ham crackers. 4. Peanut Butler variation: Sub stitute 2 tablespoons peanut but ter for 'i cup nuts. 5. Toll House Sandwiches: For each serving, spread softened va nilla ice cream between two Toll House cookies. Wrap and freeze. EASY WAY CODFISH You can freshen salt codfish by letting it soak in cold water over night. But before you do so, let it stand in warm water about five minutes, then drain and add the cold water. SANDWICHES Scald milk in saucepan over me dium flame. Combine cornstarch sugar, salt, H cup Crushed candy coated almonds. Blend slowly into hot milk, and cook, stirring until thick and smooth. Remove from fire and cool. Add almond extract and one cup coarsely broken candy-coated almonds. Spoon into pie shell and chill about 30 minutes. Decorate with whipped cream and 12 whole candy-coated al monds, available in several colors.
