Vilhjalmur Stefansson, 77, spoke at the Golden Anniversary Meet ing of the American Meat Insti tute at the Palmer House. He re called that 27 years ago he had lived a year on an exclusive diet of meat and fat, under rigid medical-controlled supervision in Belle vue Hospital, New York. At that time Stefansson and an associate conducted an experiment in Bellevue to prove that a diet Composed exclusively of meat pro teins and fat was beneficial to health and not, as had been gen erally thought up to that time, det rimental in any way to health. The experiment completely changed the attitude of many members of the medical profession toward the eating of meat, which up to that time had been blamed for almost every human ailment. "Some three years ago," said Stefansson, "I noticed what 1 thought was a return of a leg injury suffered a few years before. I took physical therapy treatments from fine doctors. The treatments did little good and I noticed gradual stiffening in a number of other joints, including my hips, knees and shoulders. I decided to go back to my old favorite Arctic diet of lean and fat in the ratio of about 4 to 1, which provided about 20 per cent of my calories trom lean meat and 80 per cent at. It never crossed my mind that I would be trying a new form of treatment for my ailing joints. "Because past experience had ahown me the virtue of this diet, I watched for an improvement in my general health. It came. I was overweight when I started my diet and on it, with very high fat calor ic meals, I lost about a pound a week. About six months ago I no ticed that the stiffness of my joints had disappeared and they were no longer tender. Obviously, I still am on the high meat and fat diet.
