Vilhjalmur Stefansson, 77, spoke
at the Golden Anniversary Meet
ing of the American Meat Insti
tute at the Palmer House. He re
called that 27 years ago he had
lived a year on an exclusive diet
of meat and fat, under rigid medical-controlled
supervision in Belle
vue Hospital, New York.
At that time Stefansson and an
associate conducted an experiment
in Bellevue to prove that a diet

teins and fat was beneficial to
health and not, as had been gen
erally thought up to that time, det
rimental in any way to health.
The experiment completely
changed the attitude of many
members of the medical profession
toward the eating of meat, which
up to that time had been blamed
for almost every human ailment.
"Some three years ago," said
Stefansson, "I noticed what
1 thought was a return of a leg
injury suffered a few years before.
I took physical therapy treatments
from fine doctors. The treatments
did little good and I noticed
gradual stiffening in a number of
other joints, including my hips,
knees and shoulders. I decided to
go back to my old favorite Arctic
diet of lean and fat in the ratio
of about 4 to 1, which provided
about 20 per cent of my calories
trom lean meat and 80 per cent
at. It never crossed my mind
that I would be trying a new form
of treatment for my ailing joints.
"Because past experience had
ahown me the virtue of this diet,
I watched for an improvement in
my general health. It came. I was
overweight when I started my diet
and on it, with very high fat calor
ic meals, I lost about a pound a
week. About six months ago I no
ticed that the stiffness of my joints
had disappeared and they were no
longer tender. Obviously, I still
am on the high meat and fat diet.

orange flavored gelatin and
chilled vanilla pudding, you come
up with a light and fluffy filling
that's refreshing and especially
colorful. For a real taste treat,
prepare a green tinted coconut pie
shell then fill with Orange Frost
and garnish with jellied pumpkin
face candies. It's attractive and
equally delicious. If you're ap
pealing to the younger set, cat-
face tarts will bring squeals of
glee from one and all. The faces
are made with licorice candy and

Whether It's Holloween, a buffet
supper after the game or a late
fall bridge party, you II enjoy
making these delicious frost des
serts. Each recipe makes an eight
inch pie and six tarts or five
sherbet glass servings. .
ORANGE FROST PIE
. 1 package vanilla pudding
and pie filling mix
2 cups milk
1 package orange-flavored
gelatin
1 cup hot water
Vi cup cold water
2 baked 8-inch pie shells, or
1 baked deep 9-inch pie shell
Chill.
Dissolve gcliitin in hot water.'
Add cold water. Chill until slightly
thickened. Set bowl of chilled gel
alin in larger bowl partly filled
with ice and water. I Be sure it
rests firmly in larger bowl.) Whip
with egg beater until fluffy and
thick like whipped cream.
Add the chilled pudding gradual
ly to the fluffy gelatin, beating
after each -addition until firm

garnish with whipped cream, if
desired.

sherbet glasses. Chill until firm.

TINTED COCONUT CRUST
2 tablespoons bulter
1 tablespoon milk
2-3 cup sifted confectioners'
