Freeilng' doesn't Improve the quality of foods or make them more tender. So If you want the juiciest end best meats, buy them that way. One way to save money and atlll have superior meats, Is to buy large cuts and have the butch' er divide them into smaller, meal size portions. Here are some helpful suites tions: To prepare for freezing, all cuts should be trimmed and shaped bone and fat removed: stew meats boned and cubed; beef for hum burger ground. Two pieces of freezer : paper should be placed between individ ual servings of meat, such as steak, ground-beef patties or chops. This makes It easier to separate them while they're still frozen. To prepare broilers for freezing, split lengthwise down the back and discard the breastbone. Cut all slewing fowl and fryers into the usual pieces. Separate the pieces with a double thickness of wrap ping material and wrap the num ber of pieces you want in one package. - For roasters, thoroughly clean but don't stuff before freezing. Wrap giblets separately In freez er paper and put in cavity of roaster. Tie wings and legs to body, then wrap the whole bird tightly in wrapping paper. Seal with tape and wrap in stockinette tor second' paper. As for fish, they should, be froz en as soon as possible alter catch ing. Clean and dress and wash. Small fish should be frozen whole, larce ones in steaks or filets. Wash scallops or shrimps in a salt-water solution Ci cup salt to 1 gallon water) before packaging and freezing. Drain and use the same method for packaging that you did for meat. Lobsters and crabs should be removed from their shells and steamed until they're thoroughly done. Then wrap, seal and freeze. Meat should be frozen immed iately after wrapping, at zero de grees. This Is done, by putting the meat or fish or fowl in the quick-freeze compartment, or along the freezer's sides or en the bot tom, j . Don't put (he unfrozen meat next to food already frozen because it might cause some thawing. And allow space for air to circulate between the packages. Don't over load the freezer past, its Instruc tion manual specifications. The bureau was organized at the request of Mayor Paul Landry. The bureau may be contacted by calling 6096, the Unit ed Fund office. The bureau has three main aims: to give food baskets to needy fami lies at Christmas: to give both food and toys to families and to give toys to those families needing them. o The bureau will sponsor a public forum, time to be announced later, of churches, fraternal organisations una individuals to aiscres vnnsi- mas needs. Any donations from Individuals sent to the bureau will be chan neled through the bureau to various organizations who are doing the actual expenditure job. Realtors To Gather In KF Thursday For Conference A day-long real estate education al conference for broken and sales men of Klamath and Lake counties will be held -at the Wlllard Hotel Thursday, December S from a a.m. to 4 p.m. Oregon's Real Estate Department with Ragnor o. Johnson, commis sioner, and Burton W. Dunn, edu cational supervisor, la cooperating with the Klamath Board of Realtors in sponsoring this conference. Simi lar conferences will be held each vear in 16 population centers In Oregon, according to Commissioner Johnson. Different phases of the real estate business will be treated each year, said Johnson, so it is important that all salesmen and brokers attend each conference if they are to keep abreast with Ore gon's rapidly expanding real estate business. Minister To Visit Chiloquin Area CHILOQUIN The Rev. Burton Bastuscheck. Willamette University professor and director of town and country churches, will visit this area Saturday and Sunday and will be guest speaker at the three local Methodist churches Sunday. He has chosen as his topic "The Church and the Community." He will appear In the pulpit at Fort Klamath at 8:30 a.m.. In Chiloquin at 11 a.m., and at the Williamson River Mission at 3 p.m. The Rev. Bastuscheck has been in Oregon for two years after years of community relations work in Iowa and Pennsylvania. He tries to visit some Oregon community each weekend and this will be his first Klamath County visit. He will be accompanied by his wife, his son who Is a sophomore in high school and by Frieda Kirk, a Chilo quin gin wno is a sophomore at Wil lamette University. Oregon was the first atata In the Union to enact a real estate license law, and la now taking a poaition of leadership with It'i education program for licensees. Provision for this education program was made by the 1955 Oregon Legisla ture through an Increase of license feea and the employment of a full time educational supervisor. Dunn worked with a local com mittee consisting of Vernon Durant, president of the Klamath Board ot Realtors; Al Longe, chairman; Cal Peyton, Ron Fisher and Id Chll cote committee members, In set ting up the December 8 confer- ence. "Community Relations and Ethics." and "Your Money's Worth in Advertising." "Legal Fundamen tal In Real Estate," and "Profes sionalizing Real Estate" are topics to be discussed at the conference.
