Take left-over mashed potatoes, for example. They can be turned into light, fluffy croquettes that will have your family ap plauding. Of course you used Klamath Russets for the original mashed potato dish. FLUFFY CROQUETTES' Oregon Russets are delicious for any potato dish. .Vou can mash them, hash them, bake them or fry them. And they are cfelicious as potato cakes or served as cro quettes, as suggested by the test kitchens o( Pacific National Adver tising. CROQUETTES 2 cups cold mashed potatoes 2 eggs 2 tablespoons butter teaspoon celery salt teaspoon marjoram (optional) 4 cup flour 1 cup bread crumbs Season with salt and pepper Beat' 1 egg, mix with potatoes and add butter and seasoning. A little milk is sometimes needed It potatoes are dry. Heat mixture In a saucepan, stirring. When it leaves the side of the pan, turn onto a flat dish. Cool. Mold into cro quettes. Roll in flour.
