, RUSSET POTATO CROQUETTES add glamour to left-overs. Take left-over mashed potatoes,
for example. They can be turned into light, fluffy croquettes that will have your family ap
plauding. Of course you used Klamath Russets for the original mashed potato dish.

any potato dish. .Vou can mash
them, hash them, bake them or
fry them. And they are cfelicious
as potato cakes or served as cro
quettes, as suggested by the test

CROQUETTES
2 cups cold mashed potatoes
2 eggs
2 tablespoons butter
teaspoon celery salt
teaspoon marjoram
(optional)
4 cup flour
1 cup bread crumbs
Season with salt and pepper
Beat' 1 egg, mix with potatoes
and add butter and seasoning. A
little milk is sometimes needed It
potatoes are dry. Heat mixture In
a saucepan, stirring. When it leaves
the side of the pan, turn onto a
flat dish. Cool. Mold into cro
quettes. Roll in flour. Dip in other
well-beaten egg. Roll in bread
crumbs. Fry In deep hot fat (360
degrees) until well browned. Serves

1. Snow on the windows can be
put on with the sprayer attach
ment. The frosty look comes from
a mixture of epsom salts and beer.
i. The Christmas tree can be
low creme, vanilla, butter and nuts
in bowl. Set fcside. Combine evap
orated milk and sugar In sauce
pan. Bring to a boil over low heat,
stirring occasionally. Continue
boiling. 'Without stirring until a
ami' II amount of mixture forms a
soft ball in cold water (or to a
temperatuie of 232 degrees!. Pour
immediately over - ingredients in
bowl and stir until chocolate is
melted and mixture is blended.
Pour into greased 8x8-lnch pan.
If desired, garnish top with pecan
halves. Cool; then cut into
yqimres. Store in refrigerator.
