' Photo Courtesy of Minute Tapioca Sweet Plum Pie 3 tablespoons quick - coking tapioca 1 cup sugar 1. teaspoon salt teaspoon cinnamon (option al) .9 cups sliced fresh red plums Pastry for two-crust 9-inch - P'e 1 tablespoon butter Combine tapioca, sugar, salt and plums. Roll hall the pastry Inch thick. Line a 9-inch pie pan and trim pastry at edge of rim. Roll remaining pastry . inch thick and cut several 3-inch slits or a fancy design near center. Fill pie shell with the plum mixture. Dot with butter. Moisten edge of bottom crust. To adjust top crust, fold pastry In half or roll loscly on rolling pin: center on filling. Open slits with a knife. (Well-opened slits are im portant to permit escape of steam during baking). Trim top crust, let ting it extend i inch over rim. To seal, press top and bottom crusts together on rim. Then fold edge of top crust under bottom crust and flute. Bake in hot oven (42S degrees) 55 minutes, or until syrup buils with heavy bubbles that do not burst. Ill Vf!
