KILPATRICK Flavor Fall Vegetables With Butter There is a wonderlul selection of fresh vegetables in the market stands this month. Cabbage, cauli flower, corn, celery, cucumbers, onions, peppers, potatoes, spinach and tomatoes all are in plentiful supply. Beans, squash, bunched vegetables and sweet potatoes are siM) available to add llavor and good eating to fall menus. If vour lamily balks at eating vegetables try giving them a little "special treatment and you will probably find the family eating and enjoving them. This "special treat ment . neeom invum ' preparation to disguise the flavor of the vegetable. In many cases, 11 tt is cooked correctly, dressed with butter, salt and pepper, and served piping hot, the problem is solved. A simple herb butter sauce oiien gives the plainest vegetables a party air and makes them ap pealing, tasty family fare. Hol landaise sauce made with butter and egg volks is another ay of giving vegetables appetite appeal, bomeiimes. careful use of spices will give marvelous, new flavor to the plainest of vegetables. WnaU ever seasonings you use, you'll llnd that by combining butter, you can bring out the full, delicate flavor of any cooked vegetable. Try these simple yet delicious butter sauces on the fall vege tables you buy. You will surely find them delicious! HERB BITTLR SAUCE cup butter i; Up. lemon juice l Th-,n finelv chODoed frefh herbs or 'i tsp. dried herbs Have Duller ai room tempera ture. 6often with wooden spoon. Add lemon Juice and heibs and beat well. If dried herbs are used add 1 Tbsp. minced parsley or chives. Herbs such as chives, tar ragon, rosemary, chervil, thyme or oregano may be used individual ly or muted. Serve over hot, cooked vegetables. HOLLANDAISE EAITE i cup butter 2 egg yolks U tsp. salt Few grains cayene 1 Tsp. lemon juice Cream butter. Beat in egg yolks one at a time, and lemon juice. Season. 6et bowl over hot water and stir until mixture slightly thickens. Set aside until ready to serve. Add boiling water, a tea spoon at a time until of desired consistency. Makes about cup.
