Cll.l) FAHIIIONFD BI.'HNT 8UGAR CAKE 'i cup brown sugar 'a cup boiling water I'a cups granulated sugsr V'i cups all-purpose flour 3 teaspoons baking powder 1U teaspoons salt cup shortening 1 eggs 1 cup cold water 1 teaspoon vanilla flavoring First, make this burnt sugar xyrup. Melt ' cup brown sugar In Irvlna ntan fivr 1 r.m I 'Mining "constantly. When augar is idsrk and burnt In appearance, re move from heat, and at edge of pun slowly stir in !3 cup boiling water. Return burnt sugar to heat und let boll gently, about 6 min utes, or until thickened. Coo). Next, make the cake: Cream fhortenlng. and gradually cream In I'i cups granulated sugar until light and fluffy. Stir In eggs, one at u time, beating well each time. Measure and sift flour with baking powder and aalt. then gradually add to creameu mixture, alienat ing wllh the cold water, and beat ing well after each addition. Stir In 3 tablespoons of the burnt sugar syrup and 1 teaspoon vanilla. CREAMY ORANGE FROSTING J cups sifted powdered sugar 3 tablespoons softened butter 1 egg volk 1 beaten egg white ', teaspoon salt 1 to 2 tablespoons grated orange peel 3 teaspoon grated lemon peel Orange Juice Cream butter, then stir In egg volk and salt. Gradually cream In rifted powdered augar and grated fruit peels, using only enough orange Juice to make a spreading consistency. Fold In stiffly beaten egg white. PARTY BUTTERSCOTCH SAUCE cup butter 2 cups brown sugar, firmly packed 1 cup boiling water 1 teaspoon salt U pint whipping cream . Place butter and sugar In wide sauce pan. Cook slowly over low direct heat, stirring constantly un til mixture Is well blended and melted, or about 6 minutes. Very carefully and slowly atlr In boiling water at edge of pan. Add aalt. Gently boll over medium heat until mixture Is thickened, like molasses, about 16 minutes, stirring often to keep from burning or sticking to bottom of nsn. Cool. When really cold, beat with rotary beater until sauce Is lovely llgm, creamy. brown color. Keen In covered Jar in refrigerator until needed. Makes about 2 cups sauce. For a fluffier, richer sauce, (old in oint whipped cream when ready to use. This la a creamy GOOD Chocolate brownies are an excel lent bar cooky to make for a picnic menu.
