STINE A pressure saucepan may be suc cessfully used lor small jobs of home canning provided the saucepan meets certain requirements, and provided processing times scientifi cally adapted to saucepans are used, specialists of the U. S. department of agriculture report. ' For home canning, saucepan " must be tall enough to hold pint Jars on a rack with the saucepan cover locked in place, and the sauce pan must have a gauge that al lows pressure to be controlled ac curately at 10 pounds. To sterilize vegetables for safe keeping, processing times at 10 pounds pressure must be 20 minutes longer In a saucepan than the times recommended for a pressure canner. the experimental canning shows. This is because the pressure sauce pan heats quickly, takes only a min ute to exhaust It air content, and cools rapidly after the Jars of food are processed. In a regular pressure canner those periods are longer than In a pressure saucepan and provide a greater share of the heat that sterilizes the food for safe keeping. Following are the processing times for pints at 10 pounds pressure which are recommended, from this experimental work, when a pressure saucepan is used: Asparagus 48 minutes; lima beans 58; snap beans 43; carrots 43; cream style com 108; whole kernel corn 78; okra 48: peas 63; cubed pumpkin 78; spinach 68; summer squash 53; dry-pac sweet : potatoes 88; wet pack- sweet pota toes 78.
