Many matrons (brides of other years) may find it interesting to take this refresher course. When it is necessary to keep green vegetables two or three days, store in the vege tables compartment of the re- frigerator. If possible, use fresh fruit juice immediately after squeezing. If it is necessary to let it stand, keep It cold and covered tightly. Cut fruits and vegetables for salad just before serving. We belong to the school of tearing greens apart rather than cutting them. Wash greens quickly under running water. Do not soak out all the good nutrients. Boiling it the best way to conserve potato food value. Taking comes next. If you must peel, keep the peel ings thin, as many of the im portant nutrive elements lie close to the skin. Start vegetables boiling bris' 'y in salted water; just enough to prevent sticking Cover to speed cooking and boil gently until tender and no more. Many vegetables are ' cooked ,to death. Put frozen vegetables on to cook while still frozen; follow. ing expert directions on the package for each variety. Heat canned foods only to steaming point. They're al ready adequately cooked. And, of course, serve or other wise use up all those good natural juices that are packed with valuable nutrients. Unused portions of canned foods may be stored, when properly covered, in the cans Jn which they come. Befrig erated, of course. Orange Glased Bologna Roll A tangy orange sauce bastes a bologna roll-and that is the newest notion we've encount ered in a long time. Why not? Bologna is a great favorite of all ages. Serve it with a tossed green salad with crumbled cheese tid-bil crackers. Mighty good cold, too. Combine half cup brown sugar, quarter cup vinegar, one tablespoon dry mustard and half cup orange juice. Simmer three minutes. Score a three to four pound piece of bologna as you would score a ham. Marinate in sauce over night. Place on spit over char coal fire; put it on oven rotis-serle-or bake it in the oven at 3S0 d eo. Baste frequent ly with the- marinade while cooking. Spitted, it should take only 20 minutes or so; In the oven; about 40 minutes.
