Timely Tips for Brides
Of Thii ind Other Junes
Brides will smartly paste
this in their thinking caps; in
the front of their favorite
cookbook or inside the kitchen
cupboard. Many matrons
(brides of other years) may
find it interesting to take this
refresher course.
When it is necessary to
keep green vegetables two or
three days, store in the vege
tables compartment of the re-
frigerator.
If possible, use fresh fruit
juice immediately after
squeezing. If it is necessary to
let it stand, keep It cold and
covered tightly.
Cut fruits and vegetables
for salad just before serving.
We belong to the school of
tearing greens apart rather
than cutting them.
Wash greens quickly under
running water. Do not soak
out all the good nutrients. If
, ... i i -i i , i

quickly with no water added
because the moisture clinging
to the leaves is adequate.
Boil potatoes in their jack
ets often. Boiling it the best
way to conserve potato food
value. Taking comes next. If
you must peel, keep the peel
ings thin, as many of the im
portant nutrive elements lie
close to the skin.
Start vegetables boiling
bris' 'y in salted water; just
enough to prevent sticking
Cover to speed cooking and
boil gently until tender and
no more. Many vegetables are
' cooked ,to death.
Put frozen vegetables on to
cook while still frozen; follow.
ing expert directions on the
package for each variety.
Heat canned foods only to
steaming point. They're al
ready adequately cooked.
And, of course, serve or other
wise use up all those good
natural juices that are packed
with valuable nutrients.
Unused portions of canned
foods may be stored, when
properly covered, in the cans
Jn which they come. Befrig
erated, of course.
Orange Glased
Bologna Roll
A tangy orange sauce bastes
a bologna roll-and that is the
newest notion we've encount
ered in a long time. Why not?
Bologna is a great favorite of
all ages. Pick out a three to
four pound piece. Family likes
the Uste, so instead of sllcl..
uo that bolnim rott. leave U
whole end baker It or tot'.t-
serie it. Serve it with a tossed
green salad with crumbled
cheese tid-bil crackers. Mighty
good cold, too.
Combine half cup brown
sugar, quarter cup vinegar,
one tablespoon dry mustard
and half cup orange juice.
Simmer three minutes. Score
a three to four pound piece of
bologna as you would score a
ham. Marinate in sauce over
night. Place on spit over char
coal fire; put it on oven rotis-serle-or
bake it in the oven
at 3S0 d eo. Baste frequent
ly with the- marinade while
cooking. Spitted, it should
take only 20 minutes or so;
In the oven; about 40 minutes.
Sugar Situation
Well tn Hand
Those who take pleasure
In putting up seasonal fruits
and berries need have no con
cern about the cost of sugar.
The recent flurry was caused
by users and distributors add
ing even more sugar to their
already high inventories. The
old story of supply and de
mand. We almost said hoard
ers, but resisted temptation.
The per capita consump
tion of sugar has not varied
significantly In recent years,
running between 103 and 104
pounds which covers all com
mercial bases as well as con
sumer level buying. The Su.
gar Act which maintains and
promotes healthy, firowmi
domestic Industry now pro
ducing more than 60 per cent
of our needed sugar, pre
serves stable suddI cs. Look
for normal sugar prices any.
ume now as you contemplate
home canning, freezing and
oinerwito preserving.
Melon Prolusion
Predominating Markets
Instead of being Dreoceu
pied with best buys this
weeK, were going to give
most of our space to rejoicing
in reporting on fresh fruits,
berrlea and melons being har
vested and increasing in sup
ply right along. In all the
U.S.A., there's no place to
compare with our west coast
for variety and abundance of
many of the good things of
life.
We promise few bargains
but great pleasure and satis
faction in the savoring of the
new season's bounty.
P e a e h pleasures. Enough
peaches are coming in to
cause June to be designated
as Fresh Peach Month,
though record shipments will
run through July and August
Several varieties are offered
now for enjoying out-of hand.
for slicing and serving with
cream, whipped cream, dairy
sour cream and soft ice cream
as well as the making of
peach pies, cobblers and oth
i W baked desserts. The klnrit
