Garnish with tomato and cucumber slices. Use white fish fillets, fresh or frozen, of your choice. Local fish displays offer sev eral varieties. 6 or more fish fillets 3 egg yolks , teaspoon salt W cup sherry 1 1 cup flour 4 cup fine dry bread crumbs 1 cup oil for frying ',4 cup cooking or salad oil 3 tablespoons sugar 6 tablespoons vinegar 2 tablespoons honey 1 teaspoon ground ginger cup pickled onions.drained W cup cold water 1VS tablespoons cornstarch Dip fish fillets in mixture of egg yolks, salt and sherry, turning frequently to coat evenly. Then dip fish into mix ture of flour and bread crumbs. Cook in hot fat about five minutes to each side; drain. Combine salad oil, sugar, vinegar, honey, ginger and on ions; cook over low heat for two minutes. Blend water and cornstarch to a paste and grad ually add to sauce, stirring constantly. Cook until smooth and thickened. Pour sauce over fish and serve. Very fine accompaniment for this is canned peach halves topped with bacon bits, broil ed until bacon is crisped. Onion-Cucumber Salad For a delightful change, make this salad and pass it in a vegetable dish as a generous relish with any meat, poultry or fish. Thinly slice one unpeelcd good-size cucumber. Thinly slice one-half medium-size on ion, separating rings. Combine one-half cup vinegar, one-half cup water, 1 1 tablespoons su gar, dash of salt and pepper. Pour over vegetables; mari nate at least one hour. Drain to serve. Avocado-Filled Salads Are Popular Specialty California avocados are readily available at reasona ble prices. When you choose avocados for immediate serv ing, they should feel slightly soft when pressure is applied gently with the palms oi me hands. We repeat this vital information for recent comers to our area. Chill the avocados. Pull off the skin with a small knife; then cut fruit in half, either lengthwise or widthwisc. Re move the seed. When you cut them widthwise, cut a thin slice from the ends to make them sit up straight. Sprinkle fruit lightly with salt and lem on juice. Arrange on beds of salad greens and fill with your choice of the following. For each four guests: Combine lightly one cup diced cooked chicken, llakcd tuna or other seafood, three fourths cup diced celery, one half cup diced cucumber and one-half cup mayonnaise. Fill avocado halves. Garnish with lemon wedges and greens. Combine one-half cup sliced ripe olives, two-thirds cup diced celery, two-thirds cup diced tomato and one-fourth cup sliced green onion. Heap into avocado halves and top mixture with one-fourth cup any tart French dressing and one tablespoon catsup. Macaroni Magic Macaroni and cheese be comes a dish of distinction when grated onion, chopped green pepper and or sliced stuffed olives are added. Soup Dress-Up A spoonful of lightly salted whipped cream or dairy sour cream dresses up any cream soup. Sprinkle with bit of pap rika or chopped parsley. April Abundance Brings Bargain Beef Beef continues to be the big buy as west coasters consume more beef than do residents of other areas. Beef in all cuts is lower than noted in many years and it is thought likely that it may not be as low again in the forseeable future. All of which means that if you have freezer space, you'd be wise to fill it with beef. Lamb is in the limelight as Spring lamb comes to market. No bargains to be sure, but mighty fine eating that justi fies the extravagance if its fancy chops you have in mind. Poultry and eggs continue to be excellent values, en couraging cooks to try new ways with broiler-fryers and encouraging more frequent serving of eggs at breakfast. Fish and shellfish in April abundance include Dungeness crabs, fish sticks and portions, halibut, flounder, oysters, rockfish, sablefish, salmon, scallops, shrimp. Stock up on canned tuna which is. often spccialed and on sardines which are good values. Cheddar Cheese Specialed All dairy products are plen tiful. Cheddar cheese, most popular of all cheeses is spe cialed for making of sand wiches, biscuits, custards, fon dues, rarebits; for cooking with macaroni, with potatoes and with rice. Try cheese slic es broiled over mayonnaiscd toast, tomato halves, topped with bacon and then all broil ed. Keep plenty of milk on hand for offering youngsters from a pitcher encouraging them to drink more milk. Plentiful staples include po tatoes, canned corn, rice, pea nut butter, shortenings, cook ing and salad oils, canned apple sauce, canned cranberry sauce. Vegetable bins are piled high with asparagus with prices lower than last week, broccoli, cabbage, topped car lots, celery, cauliflower, greens in great variety, let tuce, dry yellow onions, win ter squash, sweet potatoes. Artichoke season is short so make the most of this fine vegetable now. Celery, fresh, crisp and tender is plentiful for relish trays, salads, sea sonino soups, stews and for I salad making. Fruit displays offer fine va riety in crisp apples, winter I pears, avocados, Emperor grapes and oranges. Plenty of ' rosy rhubarb. Strawberries in creasing in supply right along. Plans for Mercury Lights Announced By Ashland Official Ashland - Plans to install 100 new mercury lights at main street intersections this year were announced by City Superintendent Elmer Biegel at the council meeting this week. Also on the immediate agenda arc the placing of 50 redwood benches in the busi ness district and at locations convenient for tourists. The heavy benches will be anchor ed in concrete. A letter from the Ashland puunc library trustees was read and discussed in which suggestions were made for a 20 -year over - all expension program. The board recom mends purchase of adjoining properly on Siskiyou blvd. and early remodeling of the library building to acommo date the children's depart ment. It is expected that by 1982. the present space of 7,290 square feet of floor space will be enlarged to 20,000 square feel by an addition to the south. A special meeting with the library boHrd was tenta tively set for Tuesday, April 9, in the council chamber. Zone Change Requests Requests for zone changes included one referred by the planning commission which Russian Action Irritates China Moscow - HOT - Soviet Pre mier Nikita Khrushchev push ed his drive for friendship with Yugoslavia today despite bitter criticism from Red China. Western experts on Soviet affairs said the Kremlin lead ers seemed to be challenging the Peking regime deliberate ly in courting the Yugoslavs, chief targets of the Chinese Reds in the ideological and po litical dispute splitting the Communist world. The Peking regime consid ers Yugoslavia s indepen dent" communism "revision ist" and accuses Yugoslav President Tito of being a trait or to the Communist cause. But Khrushchev says Yugo slavia is a socialist country which should be kept in the communist camp. As a precondition for a re conciliation with Moscow Communist China has Instated the Kremlin quit its rap- proachement with Belgrade and take a firm stand against "Tito's revisionism. Khrushchev has rejected Peking's demands and has gone out of his way this week to make it clear he is not about to be bullied on the question. Charitable Trust Legislation Urged Salem - IUPII - Atty. Gen. Robert Thornton Thursday urged passage of legislation to supervise charitable trusts and similar tax-free groups. He said it would help turn up "forgotten" money. Thornton's statement on IIB1393 was made to the! House Committee on Planning f and Development. Thornton said the bill would Dot apply to religious organi zations, educational institu tions, hospitals or other public bodies. Tile bill would require charitable corporations, trus tees and others holding simi lar funds to register and file periodic reports. Thornton said states with such legislation have "un covered millions of dollars in forgotten and dormant chari table trust funds." 'Full Crew' Train Law Clears Senate Salem - fUPI - The railroad brotherhoods scored a victory Thursday when the Senate voted 20-10 to retain the pres ent "full crew" law The move came after more than a hour of parliamentary wrangling and six ballots -one of which was the first party-line vote in the Senate this session. In effect, the Senate voted to retain the present law which requires three brake men on main line freight train ;. The law was amended to delete reference to "steam ' locomotives. The railroads had submit ted legislation which would have eliminated the statutary requirement for a third brake man. The railroad brother hoods opposed, and charged it would not be safe to op erate the trains with two brakemcn. VISITS BELGIUM Bruysels. Belgium - ITU -Gen Lyman L. The request for zone chance is made in connection with a proposed housing project now under consideration by the Episcopal diocese. A hearing was set for the plan ning commission April 8. Another zoning request to be heard at the April 16 council meeting will be area in the rear of the Bellview Lumber yard for business. A letter from the Lithia Cab company protesting the non - scheduled slops of the Evergreen Bus company with in the city limits will be dis cussed at a later council meet ing following further study. Approve Request The council approved and sent to the water committee a request from the Wranglers Association for water connec tion to its property where toilets and drinking fountains have been installed. Wiley and Reinholdt Agen cy was awarded the liability insurance contract with a bid of $4,801. Other bids were Erwin Agency, $9,622,63; Farmers Insurance, $5,981.60, and Singmasler Agcncv, $7, 341.91. Upon recommendation of the city auditors that bonds on the recorder and treasurer be increased was referred to the finance committee. City Attorney Harry Sker ry advised the council that May 17 is the date set for the Winburn heirs case. The suit is for settlement of title to the former general hospital prop erly. Following a public hearing at which two property owners appeared curb, gutter and pavement were ordered in on Merrill st. and a portion of Windsor st.
