4 D THURSDAY, MARCH 21. 1963 "Oh, you, about the incentive plan our Classified Ad men tionedto hold this job you've Feeding the Family By ZOLA pood Splendor of Spring Filli Food Baskets No one can be expected to speak of such mundane things as best buys in beans and hamburger when local mar kets proclaim gaily that Spring is here. And in me Spring, our fancy turns to festive meals featuring new fashions in food as nature pro duces early samples that hint of the abundance to come. Spring comes to our area at 20 minutes past midnight (3:20 a.m. EST according to the almanac), Thursday, March 21. The vernal equinox as you know occurs when the sun's center crosses the equator and day and night are everywhere of equal length. So today we throw budget ary discretion to the winds wafting past the window and revel in new arrivals in the market places. There are tender new green peas for the shelling and well worth the effort. New round red potatoes; tubers for cook ing in their thin skins and for combining with those newly shelled peas or for buttering and rolling in finely chopped parsley. Asparagus and artichokes showed up earlier but belong on Spring menus more often as cost comes down. Supplies were never handsomer. Snowy cauliflower, broccoli and magic mushrooms speak of spring. Rhubarb, the vege table that behaves like a fruit is in excellent supply. Green onions and rosy rad ishes taste a little sweeter. We've sighted corn on the cob and there are a few quite expensive strawberries but they never taste better than when new and expensive. Marinated Sardines and Artichokei Are Fine Seaional Go-Togethert The new crop of sardines for which Maine is famous is jamb-packed into cans which are well displayed in markets as a Lenten treat. The fish are small and firm, nutritious, de licious and bargain priced. We team them with new sea son artichokes which never looked better in the produce I bins than right now. Sardines in Marinade Drain 2 or more 4 -ounce cans Maine sardines; spread out in shallow dish. Sprinkle with 6 whole cloves and bit of bay leaf. Make marinade by combining 34 cup salad oil or olive oil, m cup lemon juice or mild vinegar, 11 teaspoon salt, 2 teaspoons dry mustard, J2 teaspoon Tabasco, 2 table spoons minced parsley, 2 tablespoons water. Spoon marinade over sardines; chill. Drain and arrange on plate with lemon wedges for squeezina over". Use un mar inade for more sardines, for dressing up artichokes or pi mientos or hard-cooked eggs or a vegetable medley. Artichoke Cookery Trim artichokes; stand up right in pan just big enough to hold artichokes snugly. Add water to cover. 1 minced oar- lie clove, 2 teaspoons lemon juice and 1 tablespoon salad oil. cover and boil gently un til leaf can be pulled easily from stalk or stem can be eas ily pierced with a fork matter of 23 to 40 mtnuies dependent on size of artl chokes. Remove immediately from water; drain upside down. Serve wholi? or halved with "chokes" removed: with marinade leftover from sar dines, with hot melted butter. lemon butter, mayonnaise or easy Hollandaise in separate small dish for artichoke leaf dipping. Pimientos Pimientos are fine accom paniment for sardines and all other fish. Select whole bright red pimientos from canned product, reserving ragged ones for use later in salad or sauce. Drain pimientos and serve plain or with marinade. Mustard Dip Favored for accompanying any sardine cold plate ar rangement. To cup mayon T, V. Iff. I.I. tt Iff. goua worm - VINCENT Editor naise, add 2 tablespoons pre pared mustard, dash of salt and pepper; blend in 4 table spoons dairy sour cream to give nice consistency. New Potatoes and New Green Peas Herald Spring First of the season new po tatoes are the round reds with the thin skins that are gently scraped off If you insist, though many enjoy them cooked in their skins. If the potatoes are larger than good sized walnuts, you may want to cut them in half or in quar ters if they're to be combined with new green peas. For each 4 servings. Scrape 1 pound new pota toes and shell 2 pounds fresh peas (you'll get about- 1V cups). Combine potatoes and peas with 1 tablespoon finely sliced green onion in a sauce pan; add 1 cup boiling water, Vz teaspoons salt. Cover and cook 15 or 20 minutes or until vegetables are tender. Add Vi cup evaporated milk or cream and 2 tablepsoons butter and simmer very gently until liquid is somewhat thickened. Many good cooks like to fold the potatoes and peas in to a nicely seasoned white sauce using the liquid in which the vegetables are cooked. For a bit of color, add 2 thinly sliced radishes just before serving, Fresh Green Peas First green peas of the sea son are a treat well worth the work. Most peas now go into cans and frozen food pack ages w h 1 c h are in super abundance the year around. Lets recall however the tender sweetness of new peat dropped into boiling salted water and cooked only 15 minutes, perhaps with a dash of onion salt or cooked with a small onion, then seasoned simply with butter, salt and pepper. Or pair new peas with small cooked onions, with freshly sauteed mushrooms, with diced cooked celery or with the smallest of the new potatoes. Chopped parsley and mint are flavor comple ments long enjoyed with peas. Mint by all means If lamb is ! served. Magic Mushrooms For Magic Moments Magic moments of eating magic mushrooms. The Pharoahs of Egypt monopo lized mushrooms for their own use. Feeling they were mucn too magic to be eaten by common folk. Mushrooms now are cultivated in tremen- dou quantity in our part of the country; are picked, packed and rushed dally to lo cal markets for enjoying at very modest cost. A mushroom grower of our acquaintance has cooked them like this for 20 years. That seems a good enough recom mendation. Butter a deep pan, cut up or slice freshly laun dered, impeded mushrooms so they fill the pan to a depth of about 2 inches. Simmer over low heat until mush rooms are covered with their own juice; takes about 10 minutes. Then cook more briskly for about 5 minutes no longer. Add salt and pep per to taste. If cooking is done by other means over higher heat, cook only about 8 minutes. Over cooking toughens this fragile vegetable that grows so mag ically. Asparagus Oriental Fresh asparagus has been around long enough that you may be looking for a new way with it. Soy sauce gives it an Oriental savor that will be favored by many. For 6 servings, wash pounds asparagus, break off each stalk wherever it snaps easily. Cut into inch long pieces and saute in 2 table spoons cooking oil along with 1 clove of garlic. Add cup chicken stock or consomme (bouillon cubes or canned) and cook covered for 10 min utes. Combine 1 tablespoon cornstarch. 1 tablespoon cold I Firemen Seek Part Of Ciqarette Tax Salem-C?!-Flremen called (or a fraction of any cigarette tax here Tuesday night to help pay for fighting ciga rette-cauted fires. Two members of the house tax committee, in response, rebuked the firemen's chief spokesman, Harold Jacobson of Multnomah county, who spoke for the Oregon Fire Chiefs, Volunteer Firemen's, and Rural Fire Protection Districts association. Jacobson said if a cigarette tax war levied, firemen want one-fifth of a p.nny of it for training centers, strengthen ing the state fire marshal's office, and setting up a fund for relatives of firemen killed in action. The sum would amount to $900,000 a bien nium.
