? p SUNDAY. Feeding the Family By ZOLA peed Frltd TotnitOM VagtUbl Trttt Those fine, firm, flavorful beefsteak-type tomatoes are suddenly readily available at reasonable cost again. Treat the family to thia old-fashioned favorite, fried tomatoes. Give them added flavor by sauteeing floured tomato slices in Spanish olive oil. For six large ripe tomatoes, shake together 1 cup flour, 3,i teaspoon salt, Vi teaspoon black pepper, 1 teaspoon minced dill (optional). Cut tomatoes into thick slices, shake two or three slices at a lime in the flour mixture Heat Vj cup olive oil in heavy . skillet: add the tomato slices cook until golden on one side; turn to brown lijhtly on oth er side. Those slices that become soft during the frying should be used for the sauce. Drain off excess oil, replace soft tomatoes In the pan; add re maining flour mixture and slowly stir In 1 cup broth made with onion bouillon cube (use beef or chicken cube if no onion cube handy). Simmer until thickened. Just before serving, add 2 table spoons dairy sour or heavy sweet cream to sauce. Serve sauce over tomatoes. Six to 8 servings. Sun and Sea Superb Cocktail The gold of sunswept grape fruit, the distinctive flavor of coast-caught lobster or crab are here sauced with a zippy blend of ketchup, mayonnaise and citrus juice for 8 serv ings. If it's something even more exciting you're seeking, garnish with canned man darin oranges and maybe green pepper strips. Or make four generous salad servings. Combine one tablespoon grapefruit juice or syrup, 13 cup tomato ketchup, 13 cup mayonnaise or salad dress ing; chill. Arrange grapefruit sections from two peeled, sec tioned fresh grapefruit or use two 1-pound cans grapefruit sections, using lettuce, endive or watercress in a seashell or on small salad plate as a base. Arrange two cups cooked lob ster cut In 1-inch pieces or cooked lump crabmeat. Top with generous spoon ful of dressing. Garnish with mandarin oranges if you like. Fruit Nui Roll Is Party Partact At a recent party, we were again reminded that hostesses and guests are partial to this type of rich fruit and nut dessert. This one uses flavor ful dried fruits combined with nutmeats and garnished with generous dab of whipped cream or with marshmallc. whip that comes in a pressur ized can. Family will think it great, too. Vi cup finely chopped prunes Vi cup finely chopped dried apricots Vi cup chopped roasted unblanched almonds 4 cup sweetened condensed milk (not evaporated) 2 teaspoons lemon juice 2 cups vanilla wafer crumbs Confectioner's sugar Whipped cream or marshmallow whip for garnish Combine fruit and nuts: blend milk and lemon juice and add cookie crumbs, mix ing well. Sprinkle confection er's suRar on waxed paper, Pat crumb mixture onto mi' gar into rectangl; about 8x10 inches. Spread with fruit-nut mixture and roll as for jelly roll. Wrap in waxed paper and chill several hours or ovcrniRht. Slice and serve with whipped cream garnish, Eight servings.
