Feeding the Family A n w . ..... By ZOLA Food Glamorous Froien Desiert Tti.layered Excitement The most exciting frozen dessert we've enjoyed in a long time. This easy-to-do but glamorous dessert is worthy of a very special occasion. Three favorite fruits, lemon, avocado and grape are re sponsible for its beauty and distinctive flavor. Here is a three layer, three color, three flavor ice cream with a one color base. Pour one large can of evaporated milk into mixing bowl. Chill in freezing compartment of refrigerator until crystals form around edges. While milk is chilling, prepare the following ingredients in three leparate bowls: Lemon-Combine one-fourth cup sugar, one tablespoon lem on peel, one-fourth cup fresh lemon juice. Crape - Add one-fourth cup sugar to one-fourth cup grape juice and one-fourth cup fresh lemon juice. Avocado - Add one-fourth cup fresh lemon juice to one half cup mashed and strained avocado pulp; blend in one fourth cup orange juice, one tablespoon grated orange peel, one-half cup sugar. Whip chilled evaporated milk until very stiff. Divide into thirds, folding one-third of the whipped milk into each of the fruit mixtures. Pour grape mixture into refriger ator tray; then a layer of avocado. Top the tray with the lemon layer. Freeze until very stiff. Forget about it un til yriu are ready to serve Slice, using two slices to a serving. Six handsome serv ings. Only difference be tween flat omelets and fluf fy ones is that you beat the egg yolks and whites separate ly to make them fluffy. Figure on two eggs per per son, one tablespoon of milk to each egg and seasonings to taste. Pour into a frying pan containing melted fat. Cook over low, and we do mean low, heat until omelet is light ly browned on bottom, Cover and cook until "set." Crease through center, fold over and roll omelet onto a hot plat ter. Dress up an omelet with a mushroom sauce, tomato sauce, cheese or Spanish sauce or top it with creamed veg etables or meat for a lunch eon or supper specialty, ly, jam, preserves or citrus For a sweet omelet, add jel marmalade just before roll ing. Many like to pass dairy sour cream with this. Spices and herbs that have a special affinity for eggs in clude basil, caraway, dill, marjoram, rosemary, savory and thyme. Sandwich Crunch For a crunchy, delectable sandwich filling, blend togeth er honey, peanut butter and poppy seeds. Mother Likely to Get Bird; Poultry Beit Buy Poultry is the big thing as we plan festivities of any size. Not only is poultry the bst buy, but it comes in all sizes. There are broiler halves for browning and barbecuing in doors or outdoors. There are frying size chick ens for piling high on a big platter; hot one day, cold the next. There are stewing chick ens for fricasseeing in dairy sour cream with pimientos added for new flavor interest; for doing in a sweet and sour sauce in the Hawaiian man ner, or in a tomato and chili sauces for those who favor Mexican foods. Or consider a chicken curry with rice and the usual East Indian accom paniments. Turkey Ways. If there's a gathering of the clan, turkey is far the best buy, easiest to prepare and most satisfying for the cook's admirers. Tur keys vary in weight, as you know. The younger ones may be broiled, fried or roasted. The larger birds may be roast ed whole, half or quarter. Stewed Turkey - If you want turkey for sliced meat platters, turkey sandwiches, salads, in creamed a la king or other "made" dishes, con sider slewing it. For stewing, place turkey pieces in heavy kettle with a tight lid. Add water to half cover plus one half teaspoon salt for each pound of ready - to . cook weight turkey. Add carrot, onion, celery, clove, pepper corns; simmer gently for two to four hours, depending on size of turkey. Cool and re frigerate promptly. Use the broth for soup. Airports Lead in Air Conditioning New York - (UPI) - Perhaps it's only logical, but airports are the leading users of air conditioning, according to a survey. All but 10 of the nation's 62 major terminals are fully air conditioned, a ratio higher than any other type of struc ture, reports the Carrier In formation service. The first complete air condi tioning system in air terminals was installed at Washington National airport in 1941 by in dustry pioneer Willis Carrier, the report said. Only nine other full systems were set up by 1956, but 27 were built in the next five years and an other 15 now are in the works. Largest of all is the cool ing system at New York's Idle wild airport, where nine machines in one utility build iing serve 10 other terminal structures scattered over 655 acres. Idlewild, with 6,300 tons of cooling capacity, has expanded so rapidly that an other 3,000 tons is being add ed.
