Probably less than you think. University of California ag rlciiltural and nutrition ex perts here have devised a true-and-false test to help rli pel widely - held misconcep tions about egus. See how vnu do. 1. The darkness of an eug's yolk indicates its superior food value? 7. Poorly fed chickens pro duce nutritionally inferior CgRS? 3. Eggs with brown shells have better quality and fla vor? 4. Egg white does not con tain any food value? 5. That twisted white cord on each side of the yolk means the egg has been fer tilized? Explanations The expert do not mean to be hardboiled, but if you an swered "true" to any of thesp, you failed the test. Here are the explanations they shell ed out: 1. Hens receive a colorless vitamin A which they transfer to the egg. This, and not the color, give the egs Its food value. 2. A laying hen receiving insufficient proteins, carbohy drates, fats, vitamins or min erals, does not lay a "bad egg"; she simply lays less eggs, producing only when her body has stored the necessary ingredients for eggs of nutri tionally high quality. No Quality Difference 3. Scientists throughout the years have found no quality or flavor difference between eggs with brown or white shells. (They admit, though, that the shells themselves might have a different taste.) 4. Egg white contains more than half of the protein and about three - fourths of the riboflavin. 5. All eggs fertilized or not, contain a white, cord-like ma terial called the chalaza which anchors the yolk to the layer of thick albumen. The chalnza Is composed of high quality protein. Rus5 Animals Learn To Signal Ailments New York (Science Service) -Russian scientists were re ported here to have the know- how for training space ani mals to send messages about their physical conditions to ground stations. The Russian know-how was described at a meeting at Co lumbia university by Dr. Gregory Razran, chairman of the department of psychology at Queens college. He has been analyzing Soviet re search under a grand from the National Institutes of Health. He said the Russians can condition animals to perform certain acts when their blood pressure or rale of breathing changes. He said a dog in a satellite could be conditioned to push a lever or button with his paw to signal his physical condition to the earth. Farmers Shouldn't Play Veterinarian Chlcago-(Science Service) Farmers are warned against do it - yourself treatment of animals in an editorial in the current Journal of the Ameri can Veterinary Medical asso ciation. The editorial blames phar maceutical advertising for leading dairymen to attempt vein puncture and other tech niques requiring veterinarian, training. The journal reports that in discreet medication of ani mals headed for immediate slaughter will result in con sumers eating unsafe and adulterated foods made im pure by drug residues in the flesh. Surveys by the Food and Drug administration since 1957 have proved this danger. For example, dangerous residues of penicillin found in milk were considered largely due to improper use of masti tis Infusion preparations or failure to follow instructions on packaged products requir ing that milk from treated cows be withheld from the market for 72 hours. 13 Unlucky for Jail's Prisoners Miami, Fla.-Those unlucky enough to wind up in Miami's new jail building, now under construction, can console themselves that fate had the cards stacked.
