For each four servings: 1 'A pounds sole fillets 1 package frozen broccoli, cooked. 1 can cream of mushroom soup. 1 cup grated sharp cheese '4 cup sherry. Dash pepper. Poach sole fillets In season ed water, simmering gently for about 10 minutes. Arrange cooked broccoli in shallow baking dish; top with poached fillets. Heat mushroom soup with sherry and pepper just to bubbling in small sauce pan. Pour over fillets and broccoli In baking dish; top with grated cheese. Heat in 350 degree oven for about 10 minutes until cheese melts or place briefly under low broil er flame. Squash. Enjoy Italian and summer squash more often. Fry sliced unpeeled Italian squash slowly in a little oil or bacon fat, turning until lightly browned. Sprinkle with sslt and pepper; add to mato sauce; cover and steam briefly; sprinkle with cheeese. Cabbage. Tender young cab bage, shredded in salads or quickly cooked ( seven min utes will do it). Treat the family to celery-seed-seasoned cole slaw with sour cream dressing. Combine shredded cabbage with raw carrots. celery, onions, peppers or to matoes; with apple pineapple ana raisins and any favored salad dressing. Green Papptn. Add flavor and color to salads and cream ed dishes. Children will eat them avidly when offered in strips along with celery stalks, carrot sticks and other finger food. Stuff peppers with loft- over meat, fish, macaroni. Celery, Cauliflower. Serve bits of celery and raw cauli flower in salads; offer them on relish tray. He and the new offspring. as yet unnamed, are shown at The Medical A)' V Dlseaaes Due To Viruses I recently read an excellent review of the viral diseases by Drs. W. J. Martin and W. E. Wellman of the Mayo Clinic. It is an important subject be cause most of the acute infec tions of man, his children, and his domestic animals are due to vi ruses. Today, these viruses can be grown in the labora tory and iden tified by ex perts. Before the year 1800, the worst of the viral dis eases was smallpox. , smallpox. Everyone had to have it, and in terrible epi demics it would kill hundreds of thousands of people. Then came vaccination, and In those few countries in which its use was well enforced, the disease was almost wiped out. Today, thousands of people who do not know how awful the disease still can be, fight to prevent the vaccination of their children. Today, great efforts are be ing made to control measles. In 1956, in this country, mea sles caused twice as many deaths in children as were caused by polio. Now doctors are finding that many chil dren with behavior problems are suffering from the results of an encephalitis or brain fever that came with an at tack of measles. Vaccines are now being tried out. Interest ingly, shingles has been found to be due to the virus of chicken-pox. Mumps Can Be Serious As many know, mumps, especially in some adults, can be a serious disease. Hence it is to be hoped that It can soon be brought under con trol with a vaccine. In 20 per cent of adult men mumps at tacks the testicles. The virus can attack the brain, the ovaries, the heart muscle, the pancreas (the big digestive gland back of the stomach), the thyroid gland, and other organs. Rarely, It leaves some deafness. Few people know that dur ing an epidemic of polio, 95 per cent of the thousands of people who have the virus growing in their bowel have no symptoms. But they get protected from developing later a paralyzing form of the disease. The Coxsackie vl ruses often produce a polio like disease, also at times a paralyzing backache, a pleur isy, and an Inflammation of the heart muscle. Today there is much Inter est in the adenoviruses which produce a sort of cold with large glands in the neck. The disease can be picked up In swimming-pools. The difficulty about making a good vaccine against influ- j enza is that there are ut least j seven viruses known to cause i the disease, and they keep changing all the time. As a result, the vaccine available, ! when an epidemic strikes, may not be the one needed to combat that pnrtlculai vi rus. By the time large amounts of vaccine for the special virus can be made, the virus may have changed again! 'Cold' Vaccine Sought Similar difficulties prob- i ably will be encountered as experts struggle to make ef finrnt vaccines to protect us against the "common cold." ! Today we much need vaccines to pro tect us from the severe form of hepatitis or inflammation of the liver. In recent years, a new type of vaccine has ben made to protect against rabies (hydro phobia). It has several ad vantages over the old type. Unfortunately, antibiotics are of no value in treating dis eases due to viruses, and it is questionable if one should try to modify the course of these diseases with cortisone Mke durgs. They can do harm as well as good. The big hope today Is that more and more experts have learned to study viruses, to identify them, and to make vaccines that can be used to combat Infections by them.
