(1 pkg.) semisweet 2 chocolate pieces 2 8 ox. cream cheese, V softened Vi l'i teaspoons vanilla extract cup firmly packed light brown sugar egg yolks egg whites teaspoon salt cup firmly packed light brown sugar TO PREPARE: 30 MIN. Pastry for 1 -crust 9-in. pie l'-i cups thinly sliced apples V cup sugar a teaspoon ground cinnamon Vi teaspoon ground 1 cup chilled whipping cream, whipped 1. Prepare and bake pastry; set aside to cool. 2. Melt the semisweet chocolate over hot water; set aside to cool. 3. Blend together in a bowl the cream cheese and vanilla extract. Add Vz cup brown sugar gradually, beating until smooth after each addition. Add the egg yolks one at a time, beating well after each addition. Stir in the cooled chocolate. 4. Beat egg whites and salt together until frothy. Add cup brown sugar gradually, beating well after each addition. Continue beating until rounded peaks are formed. Spread whipped cream and beaten egg whites' over chocolate mix ture and fold together. Turn mixture into pastry shell. Chill until firm, about 4 hrs. One 10-in. pie nutmeg 3. cup milk TO BAKE: 1 HR. 10 MIN. Vi cup cream . 2 eggs, slightly beaten !-i cup sugar !i teaspoon salt 1 teaspoon vanilla extract 1 cup small-curd cream style cottage cheese - 1. Prepare pastry (do not bake); set aside. 2. Toss sliced apples with a mixture of i cup sugar, cin namon, and nutmeg. Turn apples into pastry shell. 3. Bake at 425F 15 min. 4. Meanwhile, heat milk and cream together in top of a double boiler over simmering water just until a thin film appears. 5. Mix remaining ingredients into slightly beaten eggs: blend in hot milk and cream. 6. Remove pie from oven; reduce heat to 325F. Pour egg mixture over apples in pastry shell. . Return to oven and bake 55 min. longer, or until a silver knife comes out clean when inserted between center and edge of filling. Serve slightly warm.
