Thursday, Aug. 27, 1959 Police Report Two Mishaps in Area ; State police reported two accidents last night, in both of which they said drivers made turns into the wrong lane of traffic, struck other vehicles, and then kept going and had to be brought to a halt. Police said Charles Bowe, 64, of route 1, box 167, Eagle Point, will be charged with either failure to leave name end address at the scene of an accident or failure to operate nn the right side of the road, following an accident -about 8 p jn. yesterday on , Crater Lake highway near the Butte Falls turnoff. . Bowe's car struck a car dri ven by Dorothy A. Herbert of 2495 West Main st., Medford, police said, and Bowe left the scene but was forced to the side of the road by another driver, whose name was not given. ; The Herbert vehicle was rtowed away by a wrecker, of ficers said. : Torrence T. Judy, 70,of San Trancisco, was lodged in the county jail last night on a charge of drunk on a public highway, following an acci dent about 10:30 p.m. at the intersection of Thomas rd. and Sunset dr. Police said Judy's vehicle struck a car driven by Ernest I. McDonald, 401 West Second st., Medford, and that McDon ald turned around the gave chase and finally stopped Judy on Griffin Creek rd. Police said a ' complaint would be filed against Mc Donald for no operator's li . cense. Boy's Body Recovered From Roaring River Oregon City -flJPD- The body of Charles Vance Day, 9, was -river east of here Wednesday in about 35 feet of water. The .boy drowned late Tuesday. ; OLDEST OFFICIAL DIES ': Oklahoma City -flJPD- Okla homa's oldest elected state official, Secretary of State :John D. Conner, died Wed nesday night in a hospital .here of a kidney ailment cou pled with a heart attack. He :was 72. Fishing License Trial Scheduled Astoria-dJPO-A Kelso, Wash., man, Victor Engalls, will go on trial before a district court jury next Tuesday. He is charged with fishing in Ore gon waters without an Oregon fishing license. The Ingalls trial is a test case. He is the first of 19 an glers arrested this month to be tried on the charge. He was arrested by Oregon state police just outside the Columbia river mouth. All 19 men were fishing out of Ilwa co, Wash. Strong resentment has arisen in Washington as an outcome of their arrests. Washington does not require a fishing license for salmon fishing. EX-OPERA STAR DIES Grand Junction, Colo.-(UP&-Hans Clemens, 74 -year -old former Metropolitan Opera tenor died Wednesday at his ranch near Montrose, Colo. Clemens was a native of Bick ern, Germany. The Bible (Numbers 11:5) records that the Israelites complained to Moses as they were being led out of Egypt: "We remem ber the fish which we did eat in Egypt freely; the cucum bers and the melons, and the leeks and the onions and the garlick." The onion family is a big one and has continued to add zest to menus through the centuries. California is sur passed in onion growing only by New York and Texas; grows approximately 6 mil lion of the nation's 2 billion pounds grown annually. Know Your Onions There are the yellow onions with which we are all so familiar. There are the small white onions which so often accompany roasts. There are the decorative red onions, some' mild and some strong depending on variety. There are garlic and chives and leeks, popular relatives of the family, and the long slender green onions that enliven the menu. Onions vary in flavor ac cording to varieties. Garlic has, of course, the strongest flavor. A tiny clove of it will permeate a large dish. Leeks, on the other hand, are mildly flavored and sweet. They are the basic ingredient in famed French Vichysoisse. In between these two ex tremes of taste come the bulb onions which we call "dry" onions. The Globe onions, yel low, white nd red varieties are generally strong while the the sweet Spanish, yellow and white varieties are mild Color alone is nd?5 an indi cator of taste. When using onions to sea son a recipe, the stronger yel low ones should be used. The milder ones are good served as a vegetable. Add water and salt Cover and simmer 1V4 to 2 hours or until meat falls from bones. Lift chicken from pot and re move meat from bones. Skim off excess fat from stock. Re turn meat to pot. Add vegeta bles and seasonings. Cover and cook 15 to 20 minutes or until vegetables are tender. Serve hot. Nine servings, one cup each. ' Herbed Creamed Onions and Peas An herbed medium white sauce gives flavor interest and creamy texture to a com bination of small white onions and fresh shelled or frozen peas. Six servings. IVi pounds small white onions 1 teaspoon salt 1 pound fresii shelled peas or package frozen peas Herbed cream sauce Pour boiling water over onions, let stand five minutes and then peel. Place in a saucepan with salt and one inch boiling water. Bring to boiling point uncovered and boil five minutes. Cover and cook 15 minutes or until ten der. Add peas five minutes before onion cookine time is up. Drain and mix lightly with herbed cream sauce Serve at once. Herbed Cream Sauce. Melt three tablespoons butter: blend in three tablespoons flour. Remove from' heat and stir-in 1V4 cups milk. Cook over medium heat until of medium thickness. Add salt, freshly ground black pepper and one-half teaspoon ground basil. Pour sauce over vege tables. Onion-Orange Salad Fresh orange slices and red onion rings make a salad of fine flavor when topped with chived French salad dressing. Six servings. Cut two medium size red onions into slices one-fourth inch thick and separate into rings. Place in a bowl of ice water to crisp. Peel three me dium size oranges and cut into cartwheels one -fourth inch thick. Arrange over let tuce or other greens. Serve with chived French dressing made by stirring two table spoons chopped fresh chives into one cup French dressing. Gravensiein Apples Super When Sauced Fragrant green Gravenstein apples are round with irregu lar red stripes. Flesh is crisp, white, sweet and juicy as an apple can be. For best eating out-of-hand, store them in the refrigerator. Enjoy them now. Season is short. Sauce Variations Freshly made apple Sauce can be easily packed when cooled, in liquid-tight contain ers, labeled and stored in the freezer for future enjoyment. Pare, quarter and core eight Gravenstein apples. Add just enough water, about one cup, to steam fruit and prevent scorching. Bring to a boil and cook slowly, covered, 20 to 30 minutes or until apples are tender. Add one-half cup sugar and simmer until sugar is dis solved. For a smooth sauce, apples may be used without paring. Simply core and quarter and cook until soft, then force through sieve. Add sugar and simmer. For spicy sauce, substitute five tablespoons brown sugar for granulated sugar; add one fourth teaspoon mace, dash of cinnamon and grated lemon rind. For cinnamon sauce, cook two tablespoons cinnamon candies with the apples. For flavor fillip, especially good for serving warm with ham, add a bit of butter and chopped ginger to apple sauce while it is heating. Fried Apples-Oniont ' Seasoned onion rings and sliced cooking apples are fried in a skillet for serving with pork, chicken or lamb. Six servings.
