0 o o porrviM- cm n-rcr . FRUIT METHOD OF , PREPARATION HOW TO PACK APPLES Wash, peel, slice in 12th, blanch in steom for 1-12 minutes. Dry (no iugor or yrup). APRICOTS Scald for 1 minute. Chill in ice water, peel, halve, and plh ' in cold, medium ascorbic acid syrup. BERRIES Sort berries and wosti carefully in Whole - with cold, medium syrup. For crushed or ice water. Remove hulls and drain" - sliced berries, add 1 cup sugar to 5 cups berries -thoroughly. stir gently and pack. - CHERRIES Wash in ice water, stem, and pit. Sour cherries - 1 pound sugar to 4 pounds ruit. Sweet cherries - add thin or medium syrup. CITRUS FRUITS Pee!, remove all white membrane 6weten juice to taste and pour over fruit sections. and seeds, separate sections, save. . juice. CITRUS JUICES Ream fru'rt at low speed to miniimie Add dry sugar to taste. Package and freeze amount of air in juice. Strain and immediately, chill immediately. CRANBERRIES Stem, wash, discard poor berries. Dry (no sugar or syrup). FRUIT CUP Use any combination of fruits except Cold, medium syrup or add sugar to taste, bananas. FRUIT JUICES Simmer soft fruits until juice U . Add sugar to taste (Appro x. 1 cup per gallon). Pour NON-CITRUS - " ' separated from pulp. Strain through into container and freeze. If frozen in ice cube trays, cloth bag. remove after freezing, package in bags to store. GRAPES Stem and wash. Whole and dry. Or pack crushed with sugar or medium syrup. MELONS Cut in half, remove seeds, scoop Cover with cold, medium syrup or with orange ut balls or cut in cubes'. juice. . . PEACHES Wash, peel, pit, slice. With sugar or medium syrup. PEARS West, peel, core, quarter. I With medium syrup. f PINEAPPLE O Cut off outer rind and eyes. Cor Pack dry or cover with medium syrup. The chart at th left gives special 'recommendations for individual fruits. Fruits are best frozen in jars or in moisture-proof, vapor-proof freezer cartons. They may bo pack aged in sugar syrup, dry sugar, or without sugar. Sugar draws out the juice which forms a coating to prevent discoloration and loss of flavor and vitamins. Follow these measurements for sugar syrups: Light...2 cups sugar, 4 cups water Medium...3 cups sugar, 4 cups water Heavy...4 cups sugar, 4 cups water Stir sugar into cold water until dissolved. Syrup does not require cooking. Store in refrigerator for use as needed. 14 teaspoon of ascorbic acid powder should b added, to each 2 cups of syrup for packaging with apples, apricots, peaches, end pears to prevent discoloration. Most fruits have the best color and flavor if served just before they are completely defrosted. , Thaw fruit in un opened container in refrigerator or at' room temper ature. Thaw only as much as you plan to use; most thawed fruits will darken and lose flavor if left standing for any length of time. Frozen fruits to b cooked should be thawed and used in th same way as fresh fruit. If they are to b used for pies, thaw only until they can be separated and spread apart. Freeze fruits for box lunches in individual containers; allow 4-5 hours thawing time in lunch box. Fruits, as all ether foods, should be frozen only if they are of good quality. You get from your freezer only what you put into it,, and poor quality foods do not freeze well. . Always be sure freezing container is sealed tight ly and labelled with contents and date of freezing. Candlehol der can be stored in freezer for a day, or prepare and wrap the balls several days in advance, add candle and can dy just before serving. Snow Men Roll small ball of vanilla ice cream in shredded coco nut. Roll another larger ball in coconut, place small ball on top. Use semisweet choco late pieces for eyes and nose, small gumdrops for buttons, lollipop for broom. Special Ico Cream Desserts 1. Remove center of sponge or angel food cake to leave wall one inch thick inside and outside. Fill with peach ice cream. Serve with fresh or frozen peach slices and gar nish with whipped cream. 2. Tuesday, June 9, 1959 Building Own Cars Fad for Youngsters La Junta, Colo. (UPI) -Youngsters in La Junta have a new fad -v building their own cars which - caused some consernation among of ficials of the Colorado Stat Patrol. The law required that the home-made autos be classified as motor vehicles. This, the patrol decided, made them subject to all the titling, li censing and inspection re quirements. It also ' meant that the drivers had to be 16 and carry insurance. As a compromise, the young motorists are being al lowed to operate their cars on private property- and not on city streets or highway!. Soldier Turns Up Ancient Treasure Herzlia,' Israel - (UPD - Mil lions of soldiers have set out to dig foxholes and trenches, but very few find buried trea sure along the way. Recently, an Israel army unit on an exercise near this Mediterranean seaside resort was ordered to dig in. A sol dier's spade unearthed a gran ite statue of a mother and child that had been buried some 2,100 years ago. The ar my unit quickly vacated the area and called in the experts. Further exploration of the site by the Hebrew University of Jerusalem and the Tel Aviv museum revealed the exist ence of a Phoenician temple, many statuettes and necklac es of semi-precious stones. But there are complications' involving Vien na, president Eisenhower would be quite happy to. meet in Austria, but some of the government's European ex perts say this would have to depend on the date of a sum mit meeting, if one material izes. Late summer Communist youth,, rallies near or in Vien na, for example, would be re garded rather negatively as a backdrop for a Big Four con ference. If a summit confer ence did not take place until mid-September, then Vienna might become a stronger possi bility. . Because of the iffy situa tion on timing, however, the best speculation on site con tinues to be Geneva. Might Serve West One school of thought in official Washington holds that it might serve the West rather well to have a summit meet ing set in Russia, possibly in the Crimea where the late President Roosevelt attended the Yalta Conference in 1945. These officials don't. for a moment seriously suggest that such a location has much chance of becoming a reality. But they like to speculate on what Russia might do if a couple of thousand reporters, broadcasters and photograph ers clamored at the gates of the Soviet Union for access to the conference. Just as President Eisen hower isn't too enthusiastic Veterinary Student Given Wide Choice Chicago-DH-Today's vetin ary student has his choice of research, industry or govern ment service, and a virtual guarantee of job security. Veterinarians, more import ant now than ever before, pro tect the nation's public health and its ever-growing livestock industry. Jobs in the profession, esti mated at twice the number of graduates available to fill them, include those private practice, research and in in dustrial supervision. Veterinary medicine is a six-year course. After two years at any accredited col lege, candidates enter a vet erinary college for four years of specialized training. Graduate veterinarians must be able to diagnose, treat and control both animal and poul try diseases and be familiar with animal diseases that at tack human beings. about having Premier Nikita Khrushchev on display in this country, the Soviets might not like the idea of having to per mit unrestricted reporting, pic ture taking and broadcasting from inside the mother coun try. Double Cross FDR got a real double cross from the Russians on having reporters at the Yalta meet ings; or so he claimed oh his way home from that confer ence. Roosevelt was willing to take with him the three Amer ican press association report reporters who accompanied him on most of his other war time off record journeys. He told the three men, how ever, that Stalin, personally objected because of war condi tions in his Country and prom ised FDR that not even his own official news agency Tass would be allowed in the neigh borhood. Whereupon, Roosevelt had his three reporters wait for him outside Russia. They joined his ship in the Mediter ranean shortly after he left Russiann soil. 0 And he told! them this story shortly- after they joined Mm aboard the U.S.S. Quincy: , ; A day or two after he reach ed Yalta, he was intrigued by the fact that the man servant sweeping out his living quart ers packed a big pistol, as well as a broom. Through an inter preter he inquired about the armament, expressing some surprise that a domestic serv ant would be so equipped. No Insignia The man wore no military insignia, but be spoke up quickly to tell the President that sweeping up rooms was by no means his regular voca tion. His regular job was as a reporter for Tass. ' . That night a coded radio message crackled back to Washington. Start those three White House reporters in this direction right away. : s They got as far as Algiers where they were told to wait for further orders. Stalin, Roosevelt said later, was ada man. No American reporters. So, the American reporters could join up until FDR left Soviet territory. Prime Minister - Winston Churchill also ran around left end with FDR in much the same manner at the Atlantic Charter Conference in 1941 off the New England coast. Not a single American re porter was permitted on the conference ships. And then when the meeting was over, Roosevelt discovered that two of the officers aboard Church ill's cruiser happened to be top flight British writers. And write they did. APPLIANCE CO.
