One that is very easy to make, hand some to gaze upon? Make this in a 10 inch pie plate if you have one: otherwise a nine incher is fine. 1 10 - inch baked pastry shell 1 13 cups evaporated milk, divided 1 envelope unflavored gela tine li cup sugar Vt teaspoon salt 1 6-ounce package (1 cup) semi - sweet chocolate pieces 1 teaspoon pure vanilla ex tract 23 cup coconut Bake a nine or 10 inch pastry shell according to favorite recipe or directions on a packaged piecrust mix. Chill two-thirds cup of the evaporated milk in freezer tray of refrigerator until ice crystals form around edges. Combine gelatine, sugar and salt in top of double boiler. Pour remaining evaporated milk into a two-cup measure; add enough water to make 1V4 cups. Add to gelatine mix ture 'with semi -sweet choc olate pieces." Place over boil ing water and cook, stirring occasionally, until chocolate is melted and gelatine is dis solved. Beat with rotary beat er until blended. Add vanilla extract. Chill until mixture mounds slightly when dropped from a spoon. Turn chilled milk into cold bowl and beat with ro tary beater or on high speed of electric mixer until milk is stiff. Fold into chocolate mixture. Turn into prepared baked pie shell; chill until firm. ' Sprinkle coconut in wreath around edge or make desired design. Some mara schino cherry halves or bits, perhaps for further decora tion. ' Eat Your Milk There's many a way to get milk into meals besides drink ing it. All dairy products have important places in the family's daily menus. These include milk, cheese, cream, sour cream, buttermilk, cot tage cheese, ice cream, butter, evaporated milk, nonfat dry milk solids, chocolate milk drink, and other dairy spe cialties. Apple Lamb Curry Certain to Please Here is a fine main dish that uses two (or more) cups cooked lamb or is worthy of starting with one pound freshly cooked cubed lamb stew meat. 3 apples, peeled, cored and sliced 1 large onion, sliced 1 clove garlic, minced 1 tablespoon butter 1 tablespoons flour 1 tablespoon curry powder Vi lemon, juice and grated rind 1 can condensed bouillon OR 114 cups lamb broth or bouillon made with cubes 1 teaspoon kitchen bouquet Vz cup raisins 2 whole cloves 2 cups cubed, cooked lamb Saute apple, onion and minced garlic in butter until golden brown. Add flour mixed' with curry powder, blending well. Combine lemon juice, bouillon and kitchen bouquet; add gradually to curry mixture, stirring con stantly. Add grated , lemon rind, raisins and cloves. Cov er and simmer 30 minutes. Add lamb;, heat thoroughly. Serve Vvith plenty of good west coast-grown rice. Spin ach has a wealth of natural food values, is one of our most commonly used vege tables; is available fresh, can ned and frozen. Give it va riety like this: Combine one-third cup may onnaise, two tablespoons chopped pickle and one table spoon chili sauce. Pour over hot spinach. Remember that fresh spinach should be quick ly cooked (seven minutes) in only the water clinging to the leaves after washing or fresh ening. " Season with salt and i pepper. r There's good news along the meat front with the brightest meat situation in several years coming up and per capita consumption ex pected to rise to 156 pounds, a four pound gain over last year. Lamb, favored by west coasters, is plentiful, of ex cellent quality, getting heavi er, meatier as the season ad vances. Best buys are where they've always been on practically any cut except legs and chops and" even their prices are relenting a little. Pork supplies are increas ing right along with specials certain as the month advances. Pork in today's meat cases has less fat, more lean; some thing pork packers have been working on for a long time. Beef and veal, as is their custom, are lower in supply, a bit higher in price at this season. Good old hamburger, however, remains in the bar gain class; a mighty budget balancer. Poultry bargains seem here to stay; broilers and fryers are designated as the "plenti ful food to feature" item for the week. Turkeys are plenti ful and there's several days good eating in one. Fish and shellfish variety is excellent.. Coast - caught fish offer a wealth of health val ues. Surprise the family with Dungeness crabs, fish sticks, halibut, oysters, rockfish, sablefish, salmon or shrimp. Note plentifuls in frozen food sections, canned fish sections. When buying fish, buy extra lemons! Potato Plenty. Combine diced, cooked potatoes with diced berets for red flannel hash. Dice cooked potatoes,, add diced green pepper, pi miento and onions for O'Brien potatoes, then smother in sour cream at the last minute. Vegetable Buys. Besides po tatoes, there are carrots, cauli flower, beans, beets, broccoli, cauliflower, celery, lettuce, onions, peppers, squash of several varieties, topped tur nips, parsnips and rutabagas, sweet potatoes. , Fruit Buys. Apples in good variety, avocados, bananas, grapefruit, medium and small oranges, lemons and small tangerines.
