OP) The Uni versity of Illinois doesn't have much trouble finding volunteers for one of its research projects here members of "taste panels." No matter how nutritious food may be, the food researchers re port, if it is not tasty all the work of building proper nutri tion into various foods is wasted. People won't eat it. Consequently the researchers set up a taste-testing laboratory, complete with a kitchen and ex pert cooks to taste test various foods. The taste panel members sit 4n individual booths, with even the light carefully con trolled, and sample foods for ap pearance, color, texture, flavor and general acceptability. They also judge the same food in natural daylight. The ratings of various foods often are differ ent just from the result of view ing them in various kinds of light, the researchers report. , Overweight?
