Feeding the Family By ZOLA VINCENT rood Editor Fish in Potato Salad Delightful Innovation Potato salad is without a doubt the most popular of all summer time salads No picnic is really quite complete without one. And, of course, there are practically as many variations as there are people making it. We think you'll like the subtle, delicate flavor of fish fillets in this potato salad recipe. Recipe makes about four cups, we suggest doubling it. 2 medium potatoes 3 tablespoons French dressuig 1 package (1 pound) quick-frozen skinless cod, haddock, flound er or ocean perch fillets 4 cup water 1 package (10 ounces) quick frozen green peas Vt cup chopped celery 2 tablespoons chopped green pepper 2 tablespoons finely chopped onion si cup mayonnaise 2 tablespoons lemon juice 1 teaspoon salt ' teaspoon celery seed reel and cook potatoes. . . or cook then peel potatoes if you prefer. Dice, put in bowl and add French dressing. Allow to marin ate ab o u t 45 minutes. Mean while, place frozen block of fish in saucepan with water. Cover, bring to a boil and simmer until tender, 8 to 10 minutes. Drain well and cool. Cook peas as dir ected on package, drain and cool Flake fish; add celery, green pep per, onion, mayonaise, lemon juice, salt, celery seed, and the potatoes with French dressing Mix well. Add peas and mix lightly. Chill at least one hour. Serve on crisp salad g r e ens. Cucumbers either plain or pick led make a delightful garnish. Quick Barbecue Sauce This "quickie" makes enough sauce for four chickens. Com bine one cup tomato catsup, one cup tomato juice, one-half tea spoon tabasco, two tablespoons vinegar, three tablespoons brown sugar, one teaspoon dry mustard, two teaspoons salt, two teaspoons paprika, one-half freshly ground pepper, one medium-size mild onion, finely chopped, and four tablespoons butter or margarine. Simmer five minutes. Store in covered container until ready to use. East Indians Like Chicken Indienne East Indians, too, like chicken. And no wonder. We can't im agine anyone not liking it when prepared like this. The season ing is simply luscious. We heart ily recommend the ground cor iander seed, but it is entirely optional. 2Va to 3 pdund frying chicken, jointed a teaspoon ground red pepper '.4 teaspoon ground black pep per 1 teaspoon ground ginger 'i teaspoon ground coriander seed, optional 1 clove garlic,, grated or mash ed Salt 2 eggs 3 tablespoons water Bread or cracker crumbs Fat for deep frying Skin chicken pieces. Combine spices and grated garlic. Rub this mixture into each piece of chicken thoroughly with fing ers. Sprinkle lightly with salt. Place chicken in frying pan and add about one-fourth to one-half cup water or enough to cover bottom of pan. Cover tightly and simmer gently about one half hour or until tender. Re move cover last 10 minutes to cook juices in pan down to al most nothing. Roll each piece of chisken into fine crumbs. Dip one or two pieces at a time into egg mixture made by combin ing beaten eggs with the water Drop immediately into deep hot fat. Dribble extra bit of egg mix ture on top of each piece. Fry until golden brown-about one to two minutes. Remove from fat onto paper to drain and keep in warm place. Continue frying until all done. Serve immediate ly with a little pile of the cook ed crumbled egg mixture on top of each piece. Fresh Lemon Fluff Fresh lemon fluff is creamy and light, yet so easy to make. Made the day before, it keeps beautifully. Serve as delicious dessert or as accompaniment for fruit salads. Combine three-fourth cup sugar with one cup water and cook five minutes. Cool Add one-half cup milk and one-half cup fresh lemon juice. Pour into freezing tray; freeze firm. Beat two egg whites; gradually add one-fourth cup sugar and con tinue beating untill stiff. Turn frozen mixture into chilled bowl and beat thoroughly. Fold beaten egg whites into sherbet and re turn to tray Freeze firm. Makes five or six servings. Paper cups, plates and related items are no longer seasonal sellers. They've become standard kitchen equipment the year round. Matched sets in paper cups and plates to suit practically any occasion. For those who don't want .patterns, plain pastel colors are smart and appealing. Buying Hints Hot cups are especially de signed for hot drinks. Some are plastic coated to make them china-like in quality. Cold bever age cups are waxed to hold cold drinks efficiently. There is a price difference so it pays to read the label and buy the coup for the occasion. There are even cups especially treated to hold the head on beer. Sizes in cold cups vary from the fruit juice size to the tall nine-ounce cup so that they can be used for any thing from first course to re freshments. Hot drinks cups come in sizes six to nine ounces. Paper plates come in all sizes from 6 to 12 inches for every thing; snacks, salads, desserts and main dishes. Other interesting paper items include lidded papper contain ers in four-ounce, pint and quart sizes. The four ounce is ideal for individual portions of food for lunch box use. Pint and quart containers are naturals for freez ing and for transporting cold food to picnics. They also can be used for refrigerator storage. I attract only mar ried men! Mrs, G. H. She needs to make a big change. Anits R. I am a 21-year-old girl with a problem that is a problem. I seem to attract only married men! I have been working in the same office for the past four years and most of the married men have tried to date me. Of course, I won't go out with them, but sometimes I'm almost tempted because I hardly ever have any dates. There are a few single men where I work, but none of them seems interested in me. On week ends I go with a girl friend to a neighborhood dance hall and recreation cen ter. The same thing always hap pens. Most of the time I'm a wall flower, but if someone should get interested in me, he always turns out to be married. I really don't know what to do about it My mother has a plan, but I'm afraid it won't work out. Mrs. G. R. Anita has really had terrible luck with men. Things can't go on like this and I feel she should make a big change. Maybe her luck will turn. I want Anita to go to stay for a time with my sister, who lives in a different city and has many social contacts. I have no time for sociability the way my sister has, because I have four younger children to look out for. My sister has married off three daughters, so I guess she knows how it's done. Anita says it's silly to think her luck would be any different in another community and she says she doesn't like her aunt very much because she is too bossy. I know this is true, but I'm afraid that with her luck Anita really needs a firm hand to take over. Th Council: It is doubtful whether Anita or her mother is really so innocent as to be lieve that "luck" is at the root of this situation. It's like say ing that a man who habitually turns over and goes back to sleep after the alarm wakes him has the bad luck to be late to work every day. Anita admits there are single men where she works, but says none of them seems interested in me." It has not occurred to her to get interested in them. Interest is a two-way street. On the other hand, most mar ried men do not attempt to date girls unless they have been given a good deal of encouragement. Anita will protest that she wouldn't dream of getting in volved with a married man. We believe her. She has made no attempt to follow through on any of these potential relation ships. Anita should realize that she has created this situation. She has a desire for masculine atten tion and admiration, but some fear or inhibition keeps her from seeking a meaningful rela tionship. She is not afraid to flirt with married men because she knows that her morality will not permit her to form a real rela tionship with these men. x Anita does not need to go to her "bossy" aunt to be pres sured into a marriage she is not ready for, but it would be a good idea for her to change her job so that she can more easily form new patterns with new indi viduals. She should try to inter est herself in the single men she finds at her new job. She should also avoid that "neighborhood dance hall" and get involved in activities run by a church or civic group, where the men are well known to everyone present. (Copyright 1957.
