Then keep in mind a shank half of ham. It's the most economical of , all ham cuts and may be garnished as simply or elaborately as you wish for the festive meal. Modern, mild cure hams should be baked, not boiled. To prepare a shank half of ham, place ham on a rack, fat side up, in an open pan. Add no water.' Place in a 325 F. oven, and bake 25 minutes per pound. Thirty minutes before the end of the baking period, take ham from oven, remove rind and score fat (cut in crisscross gashes to form diamond pattern). Stick with cloves, if desired, and spread fat with glaze. An interesting glaze is brown sugar slightly moistened with frozen orange juice (thawed and used undiluted). Or spread with jelly which has been melted and thinned with a little water.
