o 0 Feeding the Family By ZOLA VINCENT rood Editor Hony, Fruits and Null Holiday Go-Togelhers Fruit cakes, breads and cook ies using dried, glaced or fresh fruits, or a combination of the three have been a part of tradi tional holiday feasting for much longer than any of us can re member. Sun-dried fruits were discov ered by early Egyptians to have wonderful keeping qualities and a sweetness never before experi enced. Techniques for drying, packaging and transporting o , ages of individual fruits or al ready cut-up combined for easy fruit cake and other dessert mak ing. A natural, of course, for decorating cakes and other holi day goodies. c The "nut-bowl" with accom panying nut-cracker is a famil iar sight particularly this Jime of year. We are most fortunate in having a wide variety of seasonal nuts for use in "sweet cooking," for stuffings, salads, as garnishes or just plain crack ing and eating. Many -good fruit, nut and honey suggestions are included in today's food columns. have improved vastly, but the principle, discovered so long ago, remains the same. The most popular of todays dried fruits are apricots, prunes, apples, figs, pears, peaches, currents and raisins. Dates, rich in energy-giving sugar plus protein and minerals, have been a staple food in many parts of the world since before our recorded Biblical times. It is still not uncommon, particularly in Arabia, for peo ple to exist for months on a diet of dates and milk. Dried they have excellent keeping qualities. However, in the Uni ted States fresh dates are pre ferred and most of our com mercial crop comes from Cal ifornia's Coachella Valley, the date-growing center of the Uni ted States. They are packed fresh and clean according to Government regulations, while imported dates must be pas turized. Nowadays fresh dates may even be purchased pitted and rolled in rice flour for easy handling. Glaced fruits are candied fruits and citron. Once shelled, untreated nuts become quite perishable and to maintain their peak of flavor and texture should be placed in tightly covered con tainers and stored in the refrig erator or at least a cool dark place. Honey iP nature's own sweet ener. Among our earliest known sweet recipes we find combina tions of honey, fruit and nuts. Honey comes in different flavors dependent upon the floral source used by the honey bee. Perfect when spread or poured over all forms of bread, hot or cold; a real treat' on cereals; and when used in cooking it adds a distinc tive flavor all it's own. Honey keeps well when stored tightly covered in a dry place. Do not refrigerate. If it shouldo crystal lize, simply heat it slowly over warm water and it. will return to it's liquid state. A Few Do's for Superior Fiuit Cakes Long slow baking is . of pri mary importance to the success of your fruit cake. Fruit cakes have long been noted for their keeping qualities and in fact are best when given time to age. Many people feel that it takes at least four weeks or longer for a fruit cake to develop it's full richness of flavor and tex ture. Others, however, find just a few days satisfactory. 'Tis a matter of taste. The important thing to re member for proper aging is that fruit , cakes must be thoroughly cooled before being wrapped snugly in wax paper or metal foil and stored in air-tight .con tainers. They also freeze well with the aging process continu ing. You might keep this in mind if you have some left over that you would like to save for eat ing later in the year. When your fruit cake has "aged," decorate with a simple sugar glaze and an arrangement of glaced fruits and halves or slivers of your favorite nuts. For smooth, attractive, easy to handle servings, chill cake thoroughly before . cutting into thin slices with a chilled knife Honey-Dale-Nut Fruit Cake One of Ease and Distinction This fruit cake is the one shown in our picture. It uses honev for a just-right flavor note. Easier to make than the heavier fruit cakes, it still re tains the advantages of keeping ability and distinctive flavor. 1 15-ounce can sweetened con densed milk (not evaporated) ii cup honey 1 tablespoon lemon juice, sherry or brandy 1 package (14-ounces) dates, pit ted and diced n 2 cup coconut (8-ounces) finely cut : Q 't cud walnuts, chopped V- pim candied cherries and DineaDDle. diced Combine condensed milk, honey and your, choice of lemon iuice. sherrv or brandy in large mixing bowl. When well- blended, add dates, coconut, walnuts. : candied fruit. Mix thoroughly,. Line 'a 9x5x3 inch loaf pan -with wax paper, oil well. Pack fruit cake mixture in pan. o Bake in moderate oven (325 degrees) for one to V-A hours or until toothpick inserted in cen ter comes out clean. Place on wrack and cool for five minutes. Remove from pan, take off paper. Flavor improves witH aging. For best cutting-results, place in refrigerator until really cold, then slice. with a chilled knife. Spiced Dried Fruits Use your favorite dried fruit or combination of fruits for this tarte-tingler, which cn b med as a relish when- served with meats or as a wonderful dessrt when! served with cram or soft custard. 3 cups prunes (dried tpricots, pears, peaches, figi or com bination) 3 cups water 1 cup vinegar 2 cups brown sugar, packed 2 3-inch sticks cinnamon 1 teaspoon wholt clove. 1 teaspoon whole spice Rinse fruit. Add water and boil 25 minutes (fruits other than prunes aftd figs require only 20 minutes). Carefully stir in vinegar, sugar and spices and simmer 10 minutes longer. Al low fruit to stand overnight in syrup before using. Makes about 2V2 pints. Q Dark Fruit Cak Rich and Tempting If you prefer dark fruit cake, you will find this one as tradi tional as the one you inherited from "great - grandmother" by way of Aunt Sue. It is recom mended that this age four weeks or longer. Instead of using the individual candied or glaced fruits you may prefer to substi tute an equal number of cups of pre-cut mixed glaced fruits. IVi cups dried apricots V4 cup honey 1 cup seeded raisins 2 cups seedless raisins Vi cup brandy, sweet wine or fruit juice 1 cup candied pineapple, diced 1 cup candied cherries, halved IV2 cups citron, diced 1 cup candied orange peel, diced 1 cup fresh dates, sliced 1 cup blanched almonds, slivered 1 cup walnuts, chopped coarsely 1 cup pecans, coarsely chopped 1 cup butter or margarine 1V4 cups brown sugar, packed 4 eggs 2 cups sifted all-purpose flour 1 teaspoon salt 1 teaspoon cinnamon V2 teaspoon mace V4 teaspoon ground cloves Vi teaspoon Soda 0 Rinse apricots,. place inesauce pan, cover with water and boil 10 minutes. Drain, cool and chop. Combine with honey in small saucepan; heat to boiling. Cover and let stand untjl cool. Chop seeded raisins and add seedless raisins. Turn apricots and honey into large bowl, add raisins and pour brandy over all. Cover and let stand over night. Candied fruits, ctiron, peel, dates and nuts may be pre pared and added to this bowl the same day, but do not mix. The following day, cream short ening and sugar together thor oughly. Bake in slow oven (2J5 degrees) for three to ZV2 hours, with a shallow pan of hot water in bot tom of oven. When done, cool completely, wrap properly and store for aging. Am Thursday, December 1, 1955 MEDFORD (OREGON) MAIL THIB ONE SEVEN Loss of GM Franchise Told To Subcommittee Washington CU.R) A Missouri auto dealer testified yesterday that General Motors Corp. re fused to renew his franchise be cause he was not selling enough cars. The dealer, J. Ed Travis Jr., St. Charles, Mo., was the first of a dozen former GM dealers scheduled to testify today' and tomorrow before the Senate Mo nopoly Subcommittee which is investigating General Motors. : Travis testified that GM offi cials visited him last June . and notified him that his franchise would not be renewed Oct. 31. "I was so struck dumb I didn't know what to say," Travis testi fied. He said that he had handled Buicks and GMC trucks at St. Charles since 1920 and Pontiacs since 1933. He said the Buick zone man ager had pressed him to try to sell more Buicks at a lower unit profit. The Buick official also suggested that Travis make up any reductions of profit on auto sales by selling more extras for the cars and by doing more ma jor tune-ups, instead of minor service jobsoin his repair shop, the witnesssaid.
