Quickest possible strawberry shortcake is made by emptying a package of the new instant yellow cake mix into a bowl; adding one cup water, two un beaten eggs and one tablespoon lemon rind; beating three min utes until smooth and creamy, turning batter into 9x9x2 (or comparable size) heat resistant baking dish which has been lined on ottom with paper. Whip one cup whipping cream; sweet en if desired. Cut cake into nine pieces. Split each piece and spread sweetened berries be tween layers and on top. All it requires is cold water as it comes from the tap and . beating with electric or hand beater. Frosting miraculously stays fluffy, does not shrink, soak into the cake or become crusty or sugary and the texture remains the same as long as the cake lasts.
