Real Italian pizza, we should remind you, is made with a rais ed yeast dough, like a very short bread dough. However, a short biscuit dough may be used with quite good results and is much quicker and easier to make. For 8 lour-inch pies or one very large one, line pie plates or a large, shallow round plate or tin with very short biscuit dough rolled a scant V4 inch thick, pressing the dough firm ly against the plate or pan. For the filling, peel and chop S large, firm, ripe tomatoes, V pound Italian salami, chopped coarsely or cut in small pieces, 3 tablespoons chopped green or black olives, 1 very large onion chopped very fine, 1 to 2 table spoons parsley and '4 pound white Italian cheese or Swiss cheese, cut in very small bits Spread filling over the dough and bake in a moderate oven for about 20 minutes or until crust is brown and stuffing bub bly and very hot. Mix a little oregano or thyme with the fill ing or sprinkle lightly over it before baking. Six servings; pro bably enough for four persons because they'll like it so much. They're easy to do at home. 6 or 8 medium size mild on ions 1 cup flour 18 teaspoon poultry season ing 1 cup milk 1 egg lA teaspoon salt Shortening or cooking oil Skin the onions, slice very thin, separate into rings, dip in to batter made from the flour, eggs and seasoning, drain well. Have ready kettle of fat hot enough to brown a small piece of bread in 80 seconds. Cottage Cheese and Honey A delicious dessert combina tion; pour cream over cottage cheese and drizzle honey over the top. Frozen or canned ber ries make a further pleasing ad dition. Honey Sauce for Desserts For fruit desserts, custards, Ice cream. Beat 1 egg; add V4 cup honey, 1 cup hot water, 1V4 tablespoons butter, V4 lemon (Juice and grated rind) in the order given. Cook over hot wa ter for about 13 minutes, stir ring constantly. Honey-Lemon Milk To 1 quart of chilled homogen ized milk, add 18 teaspoon salt, Vi cup honey; beat until thor oughly mixed. Add V cup strained lemon juice slowly, beating constantly. Serve a t once. Four servings. The South African-financed Dominion Iron and Steel Corp oration, using the German-developed Krupp-Renn process, ex pects to start production within the year. At first, the ore will move only to South African plants which, like those all over the world, are suffering an acute steel shortage. Shipments Planned It Is intended that as soon as large-scale production gets start ed, shipments will be made to adjoining African territories and overseas. The strategic implication of the new deposits is considerable. By becoming self-sufficient in steel, South Africa ceases to be a drain on the vital British and North American industries through Import. Instead, the country not only is able to be lavish with blue prints for its own industrial ex pansion but also will be able to boost adjoining underprivileged areas. Industrial construction in areas such as Rhodesia and the Belgian Congo, sorely pressed through lack of steel, wlll.be assisted with the ultimate bene fit passing to Africans in in creased employment. To start with, the new South African ore plants will produce 70,000 tons a year. Technical manager of the plant is Martin Gubitz, former chief engineer and deputy production manager of the Hermann Goering Works, Germany. Gubitz la assisted by a squad of engineers from the Krupp works. The main iron mountain at Arlie dominates a beautiful val ley where a new township Is expected to rise. It rises 3,500 feet above the valley, with the ore occurring in three layers. It is esUmated that 118,000,000 tons of iron ore is buried in the surface layer alone. This ore could meet all South Africa's requirements for sever al years. The iron content is about 47 per cent. So far, the central and bottom layers have not been explored but it is believed that. together they represent one of the larg est reserves of medium-grade ore in the world. The search for iron, ore is not ent! Easy to do and the children will love it. Melt 1 package semi sweet chocolate morsels and 3 tablespoons butter, margarine or shortening over hot, not boiling, water. Stir occasionally until melted. Cut in half cross-wise. ' 1V4 cans whole cranberry sauce 1V4 cups vinegar 1 cup brown sugar 4 pound seedless raisins U pound blanched almonds, finely chopped 1 teaspoon garlic salt 1 teaspoon ground ginger M teaspoon red pepper To the cranberries, add the vinegar and other ingredients; boil slowly, stirring occasional ly until chutney is fairly thick. Pour into hot sterilized Jars; seal. Barbecued Fish Is Unusual Dish Use trout, cod or other small fish, split and boned; or use any of the popular fresh or frozen fish fillets. 2 to 3 pounds fish, boned 1 onion, finely chopped 2 tablespoons butter or mar garine Juice of M lemon 2 teaspoons vinegar 1 taespoon honey U teaspoon curry powder or turmeric or 1 teaspoon Worcest ershire sauce 13 cup catsup Cayenne pepper to taste Arrange fish on well greased baking dish, skin-side down, if whole fish is used. Sprinkle with salt. Simmer together remaining Ingredients to consistency of thick sauce. Spread thinly over fish with a pastry brush. Broil under moderate heat, basting with sauce from time to time, for 15 to 20 minutes until cooked through but not dry. S. steel corporations, has obtain ed prospecting rights over a vast area of South West Africa, led by Dr. E. T. Hodge, the firm's representative in Africa. The prospecting is expected to start in June and will continue for three years, with up to 50 geologists engaged in the work. Dr. Hodge predictad that if worthwhile ore discoveries were made in South West develop ment of the area would follow the same lines as that undertak en by the company at El Pao, Venezuela. Railways and har bors would be built or existing facilities improved upon to get the ore to shipping points. Queen Selection For June Roundup Scheduled May 18 Selection of the 10th annual Rogue River roundup queen and her two princesses, considered by Jackson County Mounted Sheriff's possemen as one of the most important events leading up to the June 14 and 15 roundup, will be made Sunday, May 18, at 1:30 p.m. at the posse grounds on Sage road. Names of the judges and rules of the Judging were announced today by the Ladies Mounted troop members who are work ing with the posse in the queen's contest. Out-of-Town Judges The judges, from out-of-town riding groups, are Lee Pruitt, Grants Pass; Loy Fixen, captain, Josephine county posse; and Henry Enders, Ashland. The contestants will be judged 60 per cent on riding ability including handling, saddling and bridling of a horse, and posture, mounting and dismounting; 25 per cent on appearance and manners of "the contestant and mount; and 15 per cent on neat ness and suitability of equip ment, according to Mrs. Guy Hughes, troop captain. ' Plan Prises The queen will receive as prizes a Stetson hat and a hand embroidered western shirt, and her two princesses each will be given western belts with en graved buckles, the captain added. Applications for the queen contest may still be . obtained from Mr. or Mrs. Fred Slate, Lodge motel, and will be accept ed up to noon Sunday, May 18, the day of the judging, the troop officer said. The public Is Invited to the Judging and to a buffet lunch which will precede the event at 12:30 p.m. A small charge will be made for the lunch but there are no charges for the day's oth er activities, the troop officer pointed out.
