THE SOFTNE Tlie primary cause of the soft ness of youth, the delicacy and weakness of growing children. the physical unfitness of so many millions of young men for m i 1 i t ary service they were rejected in r e 1 a tively greater n u m bers in World War II than in World War I is nutritional deficiency. Dr. Brady N u t ritional deficiency conveys a suggestion of poverty, hunger or not enough to eat, or, In the lingo of the Thursday Discussion Club, mal nutrition. It is malnutrition, all right, but poverty, hunger, lack of enough to eat has nothing to do with it. Supplying a glass of milk for each school child, or better two glasses, is a step in the right direction, a good ges ture, but even this most nearly perfect food will not correct nu tritional deficiency if the young ster's appetite or hunger is satis fied or appeased for the time be ing by candy, pop, cocoa, sweet ened tea or coffee or chocolate, fluffed pap from a pretty pack age or so-called bread, cake and other dainties made of refined white flour. That is the way the appetite or hunger of most American children is satisfied and of course, it is only for the time being. Such refined flour and refined sugar concoctions not only appease the hunger or appetite quickly, but yields plen ty of calories for the immediate renewal of energy. All of these refined food items are easily digested,. easy to eat or drink whether one is hungary orthirsty or not, available every where, cheap, and they yield Lplenty of calories. The objection to them, in the proportions they are used in the everyday diet of growing children in America, is that they not only supply virtu ally none of the vitamins and minerals which are essential for health, growth, development, vigor, vite and physical fitness, not to mention enjoyment of life and longevity; but also such ex cess of pure carbohydrate (starch and sugar) Increases the require ment for vitamin Bl (thiamin) particularly, since this vitamin is necessary for complete meta bolism or use of carbohydrate in the body. Just what I mean by more wholesome, more natural, more adequate food I'll explain in a harangue to follow. Many a chubby, fat baby, not in the slums but in a well-to-do home where there is no lack of anything except perhaps ele mentary knowledge of the care and feeding of infants, suffers from one or the other nutritional deficiency manifestation scur vy (from vitamin C deficiency) or rickets (from vitamin D de ficiency). I mention these sad examples simply to show that ignorance prevails among the middle class too; and to empha size that even though the child gets enough to eat he may still suffer from serious nutritional deficiency.
