ADRIENNE'S The following article was prepared especially for the Mall Tribune by Hy Frager, Med ford chef, who has received national recognition for his unique recipes. By Ily Frager A Thanksgiving festival for bless lngs received throughout the year Is an old-age custom the world over. In our own United states It is of special significance, and Is our first national holiday. In 1821 dor ernor Bradford decreed a community dinner to celebrate the end of months of hardship and want under gone by the Plymouth colony. That first feast made use of foods native to tn new country, yet the menu was very like those served to day. Oysters, clams and fish were plentiful, and there was a variety of grains, fruit and vegetables about which the Pilgrims had learned from the Indiana. Corn bread, scalloped corn or corn pudding, and Indian meal pudding may have been Includ ed In the early New England bill of fare. Wild fowl and game. Including the much-prized turkey, were plen tlful in the neighboring woods. It only seems fitting that the typ ically American holiday feast should feature those foods for which this country la famous, and according to the present trend, more and more homes will do Just that this year. Foods found in America are blended with some favorite English dishes, recipes for which were brought by the colonists from their old homes Of this group the traditional plum pudding is typical. Traditional Plum Pucldmg 1 pound Sultana raisins 1 oup currants V4 cup walnuts 1 eup orange peel, shredded 1 cup lemon peel, shredded ! 1 oup citron, shredded ! 2 cups fine bread crumbs 't cup bread flour 1 cups suet, finely chopped ; cup milk i cup full bodied rum i cees i lemon, Juice 1 teaspoon salt teaspoon each nutmeg, allspice and cinnamon Mix dry Ingredients together thor oughly. Add milk and beaten eggs, then rum and lemon Juice. Knead mixture till well blended. Orease Inside of pudding oloth and sprinkle liberally with chopped can dled ginger. Place mixture In the cloth and tie securely. Drop in boil ing water for 4 hours. Prior to serv ing, remove from' cloth, place on serving dish, and pour rum over top liberally. Ignite at the table. During the holiday season roast turkey la the food around which many menus are planned. I will not repeat the directions for roasting tur key, but 1 would like to suggest good and unusual turkey stuffings. Pecan Stuffing S oups soft bread crumbs 1 cup broken pecan meats 1 dry onion I oup soup stock I tablespoon chopped parsley 1 teaspoon salt 1-8 teaspoon pepper Cook onion until soft In soup stock. ConTbine all Ingredients and stuff lightly into bird. . Ham Stuffing a cups minced ham 3 cups bread crumbs I cooked onion, minced a apples, minced I 1 teaspoon poultry seasoning I 3-3 teaspoon salt 4 teaspoon pepper Combine all Ingredients and stuff ;ighuy into bird. Quaker's Chestnut Dressing 1 quart chestnuts cup melted butter i cup cream 1 oup bread crumbs 1 tablespoon- onion Juice teaspoon nutmeg 1 teaspoon salt 14 tApoon pepper Slit ohestnuts crisscross on the flat side and spread in baking pan with little additional butter. Put in hot oven for about 10 min utes, cool and remove husks. Then boll In water until soft and foreo through a potato rlcer after straining off water. There should be at least 8 cups. Combine all other Ingredient with this cheatnut puree and stuff lightly into bird. Cranberry Juice Cocktail 1 pound cranberries 1 quart cold water 1 cup sugar Bring cranberries to boil In cold waver. Romove from heat when thuy burst. Strain, add sugar and boll again for five minutes. Cool and serve chilled. A Delicious Light Dessert , Hwlss Fondue 8 oups Swiss cheese (chopped) ft cup dry Bauterne wine 2 tablespoons Worcestershire 1 teaspoon sugar Cash tabasco Salt 3 tin yolks Put all Ingredients except egg yolks in a sau-.ei.an. d'-li over low leat until cheese Is melted and ingred ients are blended. Quickly stir In well-beaten egg yolks and serve uver crisp slices of toast. INT PORTLAND, Not. 33. (P) Roacoe 0. Nelson, prominent member of the Oregon Bar and former president of the state board of higher education, collapsed and died aa be concluded an addreaa before the Town club last night. Nelson passed hi, 88th birthday two weeks ago. He had appeared In rood halth. Death probably was caused by a heart attack. Hl wife waa also attending the dinner, ehe rushed to his side with Dr. Eugene Rockey, who was listen ing to the address, but the lawyer apparently died almost Instsntly. 75th Traffic Death On Portland Record PORTLAND. Not. as. (AP) Nor man O. Austin, 18, died last mgnt of Injuries received when a car be was riding In collided with a street car at MC Union avenue and Han cock atreet. Two companlona, Frank Peterson. 17, and Edwin Carter, 10, were seri ously Injured. The accident caused a short cir cuit which set the streetcar atlre and tied up traffic for nearly an hour. World war veteran and olty sanitary Inspector, will be burled Wednesday with full military honors. He died Saturday night. Dyment's father, the late Colin V. Treasury Secretary Morgenthau when he declared federal expenditure should be curtailed sharply. JUSTICE DENIED L REHE SALEM, Nov. 33. (p) The state supreme court denied today the peti tion for a rehearing of Jack Justice, sentenced to life Imprisonment for hiring Leo Hall, hanged for the sex tuple murders at Erland's Point, near Bremerton, Wash., to murder W. Prank Akin. Port of Portland Investi gator slain November 30, 1933. Justice waa accused of paying Hall 1.200 to commit the crime. Hall also waa Indicted for the Akin mur der but was executed for the sextuple murders before he could be tried for killing Akin. The court upheld Justice's convic tion unonlmously on September 39. Larry Paulos, husband of Peggy Faulos. who betrayed Hall's sextuple crime to the police, testified at the Akin trial that he assaulted Akin, In behalf of Justice, for a promise of $300. The Akin defense, In Its court appeal contended that this testimony was Inadmissible. (AP) A heavy gravel truck plunging through Pass creek bridge In the east part of Drain Monday brought minor Injuries to Its occupants. Ray Bishop and Ex Sterling, but probably averted a sen ous tragedy. The truck was being closely followed by a loaded school bus. The bridge had apparently been weakened by the swollen stream.
