Many Medford housewives are no doubt familiar with Miss Heath'a work as aha is well-known on the Pacific coast, where she has lectured to tens of thousands of women. She also conducted the very successful school last spring at the Holly the ater In this city. "You don't have to have expensive Ingredients," says Miss Heath, to pre pare a delicious and unusual dish. Just take the good "old standbys" that sre on your kitchen shelf and with a dash of Ingenuity and a burst of song (don't forget the aong), you can whip up a concoction fit for the gods." Miss Heath believes that every good housewife should keep at least an eye and a half on the family budget and for that reason her lec tures will be couched In most practi cal terms. She will show ways of combining left-ore re so happily that not a soul would suspect they were left overs. Here are a few suggestions Miss, Heath offers for "dressing up" every day dishes: . The usual egg sauoe served with fish can be made a new and interest ing dish by adding some sliced blanched almonds and soma whole Malaga grapes. It sounds imposlble, , I know but Just try It! - I Lemon garnishes make foods look better and taste better. Pish and oysters lead a flavorlees existence when 'served without the tartness. ' Apples their cavities stuffed with figs and bit of grated orange rind, br "Orape -Nuts' and raisins and "baked, are a far or? from the conven tional baked apple. "Here's an Interesting way to use ttp left over boiled potatoes. Slice cold boiled potatoea the long way, dust with salt and paprika and put a thin slloe of cheese between each two pieces. Brush with melted but ter. Put In oven and bake until brown. "Put a -spoonful of creamed chicken (or left-over meat) between baking powder biscuits rolled thin, Press together and bake In a hot oven. " 'Omelette Aux Petite Pola' sounds grand, doesn't itt But it's nothing more than a half cup of left-over but tered or creamed peas poured Into the ordinary omelette as the edges begin to set, then rolled or folded ever and served on a hot platter. Gar nish with a hedge of parsley or broiled, curled bacon. "The next time you order pork chops, have a pocket cut Into them and stuff them, with a bread dress ing, fry slowly or bake until done. You will need extra thick chops to prepare in this manner they are de licious!'' Miss Heath has prepared a most Interesting program for Medford housewives.
