H0ME OWNED AND OPERATED"- In l!m with the extensive food conservation program, planned here and throughout the state to enable all citizens to be well fed during the coming winter, ln spite of depression, several suggestion were presented the Mall Tribune today by Mrs. H. D. McCaskey. The price of green beans Is at pres ent very low, and Mrs. McCaskey sub mits the following recipe from her old German cookbook, as an Ideal way of preserving beans and one which can be carried out by any person who will follow the Instructions carefully. It is called "Salted Green Beans." The Ingredients are green beans and salt, and the process reads: "Wash, string and slice the beans, and pack in layers with salt, Into stone Jars. Each layer of beans must be pressed down with a wooden pes tle. Through this process some Juice will collect on the beans when they are all In. Now place a piece of white muslin on them, a little board weighted down with a stone on top of that and keep them cool. When using, soak them In water to take out some of the salt. Look to It that there Is no mould forming on them. The cloth, board and stone must be cleaned occasionally." Another recipe suggested by Mrs. McCaskey Is for the preparation of sauer kraut, which se says "you may not like, but will find very healthful and good for you and your family." The Ingredients are firm, white cabbage heads and salt. Preparation: Remove the bad outer leaves, cut the cabbage in halves, cut out the heart, slice the cabbage in fine shreds and put Into a clean barrel or stone Jar. First place whole cabbage leaves over the bottom of the Jar or barrel, pack on a layer of sltced cabbage, strew It with salt and pack on another layer, pressing each layer down firm ly, and so on until the cabbage Is all used up. Press the contents down firmly so the liquor will cover the cabbage, then cover It with a clean piece of white muslin, a board and a stone to hold It down. Look after It occasionally and clean the cloth , board and stone. After the cabbage baa fermented enough, which you will know by its sour odor, put It in a cool place. Both recipes have been tried oy Mrs. McCaskey and other Medford women, who recommend them as de licious and practical. Mrs. McCaskey also recommends the crocking of eggs as an economy measure, stating that chose put down In liquid glass are very fine for all uses but poaching. While products are cheap and winter ahead, all housewives are advised to Join the busy bee In preparing for the cold season, when living will be more difficult than It Is now. (&) Expenditure for foreat protection In Oregon on lands coming under the Jurisdiction of the state fores-try department the paat six months were a, third less than for the first alx months of 1931. Lynn F. Cronmlller, state for eater, announced. The expenditures Include all those made by various associations of the state aa well as those made directly out of the forester's office. Total for the first six months this year were 07,723 as agalnat (127.478 a year ago, showing a decrease of 41.7S5. A contributing factor In the re duced expenditure has been the fsy- orable fire season. Cronemlller said. However, a reduction In salaries and the cost of supplies and equipment nas alio contributed Its share. The first half of the year 1931 wu ex tremely hazardous. Fires started at the time of the serious windstorm of April 22 nd continued through out the season. This made It neces sary to Immediately place the full personnel In the field. "So far the 1932 season has been the most favorable the patrol or ganizations have experienced In a number of years," Cronemlller said Past Potentate Of Shrine Dies PORTLAND, Ore.. July 99.
