Department of Agriculture The feeling of satisfaction tbat fol low good meal la due largely to t. fata which were either a part of 'e food Itself or were added to it for flavor, nutritionists say. We are told that the people of Europe who were short of fat during the war years felt hungry nearly all the time, even when their actual needs were satis fied. It Is fat that gives staying power to food, and fat, together with starch and sugar, gives to food Its energy value. Therefore the Bureau of Home Economics of the U. S. De partment of Agriculture calls atten tion wo to, the Importance of fats In low-cost meals, to make the meals more appetizing and also to make them "stick to the ribs." There Is some fat, of course. In al most every kind of food, whether an lmal or vegetable. But all the vege tables and some cuts of meat taste better to most people if some fat Is added, either In cooking or In serv ing, and that is where the so-called table fats come In Including butter, margarine and the salad oils. Butter, whlcb Is used to a greater extent than any other table fat, la Just now a remarkable food bargain. In fact, the price Is down to the lowest point In more than 30 years. To the good cook, the butter fla vor Is a desirable addition to almost any vegetable dish, and butter "Just makes" many desserts. Buttered beans, buttered fresh peas, buttered cabbage, buttered beets, buttered car rots these and other vegetables that are all good In themselves are far more attractive to most persons when served with melted butter. Long heating destroys the butter flavor and to cook vegetables wltA butter Is wasteful; therefore the bu reau advises adding the butter seas oning at the last minute before serv ing. Browned butter the browning must be done carefully, however, lest the butter burn gives a delicious flavor to cream sauce. Parsley but ter which Is melted butter with chopped parsley In It Is a favorite dressing for boiled potatoes, and lem on butter, or melted butter with lemon Juice, goes well with broiled fish. Young onions, boiled and serv ed on toast with melter butter, make an enjoyable supper dish. Holland alse sauce, when both eggs and butter are cheap, Is a special delicacy with fish, with greens, and particularly with the stalked or head vegetables like col lards, cabbage, cauliflower, bruasels sprouts or broccoli. The pies "that mother used to make" undoubtedly .had butter in the filling all fruit pies and apple pies, especially. Baked apple and brown betty, too, need the butter flavor to make them more inviting. The use of so much butter may seem extravagant. However, two level tablespoons, or about one ounce, will seaspn five or six liberal servings of cabbage, carrots, snap beans, beets or CULINARY RAFT..., By Estella Dorgan, Director ot Home Service, California Oregon Power Co. SHORT CAKES Shortcake usually means "straw berry shortcake" to most of us. And, truly. It Is delicious and unsurpassed. However, when strawberries are gone, or when we wish a variety of fruit there are various combinations which are delightful. The favorite Is the old-fashioned "biscuit" ahortcake. Then, there are some who like sponge cake for the foundation and I know of a simple graham cracker cake which Is especially fine with crushed blackberries. So, today we shall have "some of each." Biscuit Shortcake 3 cupa flour. 4 teaspoons baking powder. teaspoon salt. 1 tablespoon sugar. 1-3 cup butter. cup milk. Sift dry Ingredients together. Work In butter with blender and add milk gradually. Knead Just a little bit on board, divide In two parts and roll out to fit layer cake pans. Bake for 15 minutes at 430 degrees. Crush and sweeten berries to taste and let stand several minutes before serving. Serve plain or with cream. Fillings Besides strawberries, ffeah peaches, sUced oranges, sliced bananas, rasp berries, blackberries, cooked rhubarb and various combinations of fruits are all delicious served with short cake. Hot Water Sponge Cake 3 eggs, well beaten. 1 cup sugar. 1 cup all purpose flour. teaspoon salt. 3 teaspoons baking powder. H cup hot water. 1 teaspoon lemon extract. All sugar gradually to beaten eggs and continue beating with rotary beater. Fold In sifted Ingredients. Add bot water gradually, then flavor ing. Bake In loaf pan at 390 degrees for one-half hour. Crushed fruit served over angel cake is another flavorful type of "shortcake." Graham Cracker Cake for Blackberries 1-3 cup shortening. 1 cup sugar. 3 eggs. 1 cup flour. 3 teaspoons baking powder. 1 cup graham crackers (crushed). cup cocoanut. Vij teaspoon salt. 1 teaspoon vanilla. 1 cup milk. Cream shortening, add sugar grad ually, then epg yolks. Sift flour, bak ing powder and salt together and add to first mixture, then add the crush ed crackers (9 regular sin). Add milk, cocoanut, flavoring snd, finally, the beaten reg whites. Bake In layer pans. 35 minutes at 375 degrees. Serve with crushed and sweetened blackberries. Rose burg. Salad oils are another means of adding energy value and staying quality as well as attractiveness to a meal. Under different trade names, cottonseed and corn oils are the most common substitutes for olive oil In salad dressings and are relatively cheap. MENU FOR ONE DAY Breakfast Hot Cereal Toast Coffee (adults) Milk (children) Dinner Broiled Ground Beef on Toast Potatoes With Parsley Butter Tomato Jelly Salad (With Sliced Onion, Shredded Cab bage and French Dressing) (Tomato Juice for youngest Children) Bread and Butter Milk for Children Supper Greens with Bacon Drippings Spoon Bread Berries or Bananas Milk for All RECIPES Spoon Bread 1 cup corn meal. 3 cups cold water, 3 teaspoons salt. -v 1 cup milk. 3 or 3 eggs. 3 tablespoons melted fat. Mix the meal, water and salt, and boll for 6 minutes, stirring constant ly. All the milk, well beaten eggs, and melted fat, and mix well. Pour In a well-greased hot pan or bak ing dish hand bake for 45 to 60 minutes In a hot oven (400 degrees Fahrenheit). Serve from the pan In which baked. Hollandalse Sauce 4 egg yolks. 3 tablespoons lemon Juice. cup butter. 14 teaspoon salt. Pepper. cup boiling water. Divide the butter Into three por tions. Beat the egg yolks and lemon Juice together, add one piece of but ter, and cook in a double boiler, stir ring constantly until the mixture be gins to thicken. Remove from the stove, add a second piece of butter, and stir rapidly. Then add the re maining butter, and continue to stir until the mixture Is completely blended. Add the salt, pepper and boiling water. Return to the double boiler, and still until the sauce thickens. Parsley or Watercress Butter for Sandwich Filling 14 cup butter. - cup finely ground parsley or watercress. y4 tablespoon salt. tablespoon lemon Juice, If de sired. Cream the butter, add the finely ground watercress, salt and lemon Juice, and still until well blended. Use as a sandwich spread. ROAD PROJECTS TOTAL $416,547 PORTLAND, Ore.. June 34. (AP) More than 150 bidders, aU but two being Oregon firms, entered esti mates for road and bridge projects at low costs of $416,547 on 15 dif ferent Jobs. Three of the projects ran above 950.000 each. Specifica tions on the 63 miles of Improve ment call for Oregon labor on a six hour a day basis on state and fed eral Jobs. The largest project from the stand point of cost was macadam and oil ing Jobs on the highways In the vicinities of Tangent. Monmouth and Corvallls In Linn, Benton and Polk counties'. Only four bids were ent ered with J. C. Compton of McMlnn vllle being low at 160.766. At the morning session, which ran through the noon hour because of the largest numoer of bids ever filed with tiie commission, Leslie Scott, chairman, declared it would cost Oregon (40,000,000 to take care of the unemployed In the state for the next year.
